The 2025 week 14 is complete.

Breakfast
After several weeks’ of including the Snicker’s baked oats on the menu…it reappears. The ‘Ole Buckeye got stuck making his own breakfasts last week so I have moved the baked oats to the current menu plan. There will be enough for several servings over the course of the week. I will make a point of including this vegan oat prep not only for breakfast, but also as a dessert and snack. It is just that versatile. I have also included a breakfast casserole that I made routinely in the past, but have not repeated in quite some time. If time permits I will also prepare the sausage biscuits and granola for future meals.

I have a variety of leftovers for lunches the beginning of the week, then I plan to try 2 new recipes…a salad and a soup, both of which appear to be cook once/eat again offerings.

Dinner
The 2025 week 14 has plenty of leftovers we will enjoy the beginning of the week. The only new recipe is for the salmon and I have invited our daughter for dinner. Auburn plays in the Final Four Basketball Tournament on Saturday so I have planned hot dogs, coleslaw and baked beans…maybe even chips and dip. The chicken Kiev recipe is an old time family favorite which I have pulled out of the archives.

Hits and Misses
My daughter gifted us 8 hard boiled eggs and the first thing that came to my mind was a very successful egg salad recipe (historically I do not like egg salad) I had plenty of fresh dill and chives and this was outstanding.

Gosh…I made this years ago when I first started reading Trim Healthy Mama books. I have seen several different versions since that time, but decided to make this one since we enjoyed it in the past. Adding the fresh chopped green onions is a must to add a pop of flavor.

I have a variety of great fajita recipes, but this one is by far the best Wow, just wow. The marinade for the chicken was outstanding and this will now be my go-to recipe for fajitas .

I have made Mississippi chuck roast and pork roast, so why not try chicken? This is yet another slow cooker comfort food addition to the others. It will definitely be repeated.

I haven’t made this keto version in a long time. This is another comfort food entree that is both enjoyable and services several meals. We enjoyed it over brown rice but the next go around I plan to make keto biscuits.

This is an all time favorite grilled steak. It all began years ago when flank steak was a real bargain. Flank steak is definitely no longer a bargain, but this remains a favorite. We invited our daughter for dinner and still had enough steak left for an additional meal. The steak from Butcher Box was delicious and our first grilled steak of the season!

Recap
I am finding that I need to review the THM philosophy and recipes. Unfortunately I have been gaining weight and I know that the menu plan has not been ideal over the past weeks and our trip to Spain certainly did not help. I am not very good at incorporating enough protein at each meal.
It is interesting that the THM pod cast featured “Coming Back to Trim Healthy Mama”. They discussed how they have modified the plan and it really made sense to me. They will be coming out with a new recipe book, but several of their new recipes are available on the website. Since I had already planned to make changes this pod cast came at a perfect time. I will plan to make gradual changes yet again and even though they are not apparent in the 2025 week 14 menu plan, I hope to include more in the weeks ahead. The journey continues. Bon Appetit!
