The 2025 week 10 menu plan is basically just full of ideas. We leave for Spain on Wednesday and will be away for 12 days, including travel days. On Tuesday we will be eating a variety of left overs and freezing others. The meal plan that follows is basically ideas for what we might prepare at the time share. There will have a full kitchen. We normally eat breakfasts and lunches “in” and dinners “out”. Trying new restaurants is always an adventure, but I do quite a bit of research in advance.

I have already prepared the dry ingredients for the baked oatmeal for the trip. A grocery list has been made in advance and it includes all of the ingredients I will need for preparing the meals I have planned.

This frittata is a go-to breakfast when I have the ingredients on hand. It is one of our favorite egg dishes and we have it frequently.

Whenever I see a sale on pineapple this recipe comes to mind. Its’ tropical flavors are great and it services several morning meals.

I have made this salad in the past, but this time I made it one day in advance so that the flavors had time to develop. The salad retains it fresh crispness and it is more enjoyable. We sprinkle peanuts each serving.

This soup is a top 5 at our house. When I serve it to company they ask for the recipe after their second helping! I use hot Italian Sausage and extra kale. It gets better and better each day. In fact I prepared this a day in advance as well.

I love this recipe for salmon. It is quick, easy and delicious. I can have a great meal even if it is a last minute decision.

This was a flavorful, quick and easy chicken preparation. The chicken was moist as well. This could easily be a meal for a busy day…quick dinner.

Oh my gosh! This Greek chicken recipe is outstanding. Unfortunately I did not have the exact ingredients called for but it was still excellent. There were a few small potatoes, so I used a sweet potato. I had peppers that needed to be used so I added them as well. Chicken breasts were used since that is what I had on hand. Next time I will get fresh dill, which will take it over the top. This is a recipe I will make over and over!

I am always on the lookout for meatless meals and am often attracted to those featuring mushrooms. This recipe is packed with mushrooms and fulfills the need for meat. It called to be served over mashed potatoes (I used smashed). It was good, filling and nutritious. Would I make it again…probably not.
