Barley salad…why you might ask? Well I had cooked barley in the freezer and mistakenly thawed it requiring finding a use. I happened to have these ingredients on hand and voila’ a salad. The mistake proved to be a great salad and worthy of repurchasing barley on my next grocery run, but also adding it to the rotation.

Dinner

This recipe was my first venture into “Bowls” for dinner. The chicken preparation with Greek marinade was outstanding including cooking it in the air fryer. I will make this chicken often in the future. The bowls were very good. However the next day for lunch we put the leftovers in pita pockets for an outstanding lunch. All in all this was a successful venture into this type of meal.

The air fryer was the appliance of the week…I left it on the counter for days. We loved this orange chicken. I served it over rice with broccoli and it was delicious. A big plus…we enjoyed it for dinner a second evening.

My second venture into a “Bowl” was this Tex-Mex meal. Once again the seasoning on the chicken was perfect. Although the preparation took longer than I would have liked, the result was delicious. The Ole Buckeye made his famous guacamole which we enjoyed both for happy hour and with the bowls. This recipe also made enough for an eat again meal. The next time I plan to try the cilantro lime rice to go with it.

I made this easy breezy brown rice recipe to supply the bowls that I planned for the week. I packaged some for the freezer and used the rest for the bowls. Such an easy fool proof way to make brown rice. A big plus…enough for several meals.

Dessert

I haven’t made this cake in quite some time, although it is a family favorite. Believe me…it is more of a dessert than a coffee cake. The ‘Ole Buckeye purchased raspberries at Costco which made the decision to resurrect this recipe. By the way, has anyone other than myself realized that produce does not last like it used too…not just from Costco, but elsewhere as well.I have noticed it particularly with tomatoes, berries and cucumbers. Sigh.
