2024 Week 28 Menu Plan

The 2024 week 28 menu plan is complete and as usual it reflects several meals that needed to be carried over from last week. Those recipes that I am planning for the first time are designated.*

Hits and Misses

I planned this crisp as a breakfast offering, but served it for dessert on July 4th. It was perfect as a dessert, but the ‘Ole Buckeye enjoyed it equally for breakfast.

Oat Pecan Blueberry Crisp

What happens when there is lots of kale left and it needs to be used? Simple. Google kale recipes! It just so happened that all of the ingredients for this soup were on hand. Lucky for us…this soup was delicious and got better and better each day. A definite keeper and rotation worthy.

Tuscan White Bean Kale Soup

I have several quinoa recipes with a Mexican flare, but this one is particularly easy. In fact it is called a “dump and bake” recipe, which greatly appealed to me…but grossed out my daughter and the ‘Ole Buckeye. Regardless, this was flavorful and filling and will service several meals.

Black Bean Quinoa Casserole

This recipe was a delightful surprise. The flavors were great and the texture perfect. We had this open faced on a toasted whole wheat English muffin because as with most “sloppy” joes, they are sloppy to eat. So many lentil recipes leave a lot to be desired…but this one is a keeper.

This is a flavorful salad…next time I will use much less olive oil in the dressing.

Farro Salad

This recipe caught my attention because of the simplicity of preparation and the fact that I enjoy gnocchi. I used cauliflower gnocchi (the ‘Ole Buckeye requested “Real” potato gnocchi next time.) It was unimpressive initially, but I added fresh basil which made all the difference in the world.

I have a great recipe for Greek Shrimp already, but this one provide depth of flavors and ingredients that we love. It was a hit…maybe not quite as enjoyable as our original recipe but certainly repeat worthy.

Recap

I tend to plan a fairly industrious menu incorporating many new recipes. Often untried recipes provide enough for multiple meals which happened last week. With that being said, I have several recipes that have moved forward into this week. As we continue to learn more and more about nutrition I am finding new and interesting resources for our eating adventures. Bon Appetit!
