Breakfast
Early mornings during the week require easy quick breakfasts…one new smoothie and one tried and true.
Lunch
We have been eating a variety of veggie sandwiches on Ezekiel Bread with various additions…normally sliced red onion, tomato and sprouts. After a disappointing new easy lentil soup last week, I am reverting to a great one from THM which I haven’t made in quite some time.

Dinner
Lucky for me I have lots of leftovers that will work for “cook once, eat again” dinners. I have also included 2 additional plant based meals to try. I am excited to test a new method of preparing brown rice. I plan to serve it for a meal and freeze packets for future use.

My research continues and I will admit that the more I learn the more confused I get. The most recent info series was on Conquering Cancer and the nutritional guidelines pointed to a plant based diet for the prevention of inflammation which is a primarily cause of a multitude of illnesses including cancer. The last series I listened to was on dementia and alzheimer’s and the nutritional guidelines included more fats. However both focused on including organic produce, no sugar and avoiding processed foods. I am on the journey of incorporating as much of what I learn into making healthy meals but also insuring that what we eat…we also enjoy. The journey continues…Bon Appetit!
