We have just completed 2 weeks in Hilton Head, Charleston and Myrtle Beach. The last thing I have had time to do is work on a menu plan. Actually I had a plan scribbled on note paper…but putting it on the blog is a whole different exercise. It is complete, late and full of leftovers not only from the trip, but also meals that were quickly stashed in the freezer as we left for our 2 week adventure.

This plan is straight to the point…no fluff. Next week I will return to the basics with true healthy options. We splurged in the “low country” and enjoyed Southern comfort food. Unfortunately the scale shows the added pounds. It is time to recoup and return to a healthy diet heavy on plant based options. The journey continues. Bon Appetit!
