Yet another successful soup. I made it as written, however the next time I will use kale. It will be easier to find and a bit more hardy. The flavor of this soup was great.
One Pot Soup (Rachael Ray)
I liked the hummus…the ‘Ole Buckeye, not so much. He thought it was too sweet. I enjoyed it.
I make this cranberry dessert every year during the holidays and then proceed to forget just how good it is and how much we enjoy it. It is great with a splash of whipped almond milk (which I found at Aldi).
I am not going to go into a lot of detail about our Thanksgiving Dinner, but it was absolutely delicious and worthy of a complete repeat next year. The menu is listed in 2023 week 47. I did a variation of Lucia’s stuffing (Grandma’s Stuffing)using no eggs and vegetable broth. It was excellent. I also made both salads…one on Thanksgiving and the other for leftovers…both recipes were outstanding.

Last week was a busy week of cooking but I will admit that our Thanksgiving dinner was one of the best I have ever had. It was a wonderful family celebration as well. It helped to have so many leftovers as I did all of the Christmas decorating over the weekend…thus this late post. Week 48 also includes a 2 day get away to Williamsburg to celebrate Grand Illumination, a symphony performance and fabulous Farmers’ market, along with enjoying our favorite restaurants!
