This is the second go around for this breakfast casserole and it will definitely be on the breakfast rotation as well as a time share meal addition. It is protein packed and delicious. It reheats great for eat again mornings.

Mushroom Spinach Egg Cheese Casserole

The flavor profile of this soup is great. As the weather cools this will be a great addition to the soup planning.

Smokey Chickpea, Red Lentil, Vegetable Soup

This is my stand by salad both for home and travel. It never gets old.

Taco Crunch Salad

I had all of the ingredients for this past on hand and needed to use my spaghetti squash. It was easy and made enough for several repeat meals, but I would not make it again unless I made some additions like capers and kalamata olives. Plenty of other options out there.

Keto Feta Pasta

If I needed to add a salad to an all time favorites list that should be on the rotation, this would be one of them. It is enjoyable all year round, and so very healthy. I use stevia and half mayo and half Greek yogurt for the dressing to make it as healthy as possible and still keep the flavor profile. The salad keeps extremely well, however I add the sunflower seeds when I serve it to keep them as crunchy as possible.

Amish Broccoli Salad

An alternative Vegan broccoli salad is also one we enjoy. The addition of coconut “bacon” offers a smokey flavor.

Oh My Gosh…this was DELICIOUS and the clean up versus stove top can’t be overestimated. This method is a keeper. In fact this is only the third recipe I have tried in the air fryer and I have decided that I have been intimidated for way too long!

The meals planned for the ‘Ole Buckeye worked exceedingly well. The portions that I took on my trip to Myrtle Beach were eaten sparingly since we preferred to venture out for meals. Now that I have returned home the focus will return to healthy eating, more plant based additions, and using the air fryer in additional ways. The adventure continues. Bon Appetit!
