What to do when pineapples go on sale…revert back to several old favorites from Trim Healthy Mama recipes. In fact the more I study nutrition, the more I realize how on point much of their philosophy is.

Pineapple Upside Down Oatmeal

This egg casserole is not something that I would normally make for the two of us, but we have a house guest. In addition I am looking for a satisfying egg dish to add to my collection for time share, family, and holiday breakfasts. Yet another experiment.

I have been trying a multitude of soups and salads over the past months to provide healthy lunches with multiple servings. This salad has very few ingredients and had good flavor. It will be very stable for meals over several days.

Food for Thought

Pineapples were on sale this week and they were ripe and ready eat…a big plus. Although high in fructose the pineapple has health benefits that outweigh that fact. One cup of pineapple supplies the recommended daily allowance of vitamin C and copper another essential mineral. The high vitamin C content assists the body in making collagen which is good for wound healing. Pineapple contains the anti-inflammatory substance bromelain. Bromelain has also been shown to inhibit cell growth in gastric cancer and colon cancer. Since canned pineapple often has added sugar, it is best to purchase it fresh.

Such a busy week of food prep and entertaining, I am fortunate to have gotten a menu plan together. After lengthy time getting this blog ready to publish…it vanished! Somehow things didn’t get saved. What you see is a very abbreviated version…but it is a version. Until the next time…Bon Appetit.
