A breakfast staple when we have guests!

Sausage Crescent Casserole

This salad has become a traditional lunch for a group as well as a meal preparation at our time share.

Taco Crunch Salad

So far this is my favorite lentil soup and made a perfect backup lunch for weekend guests.

Alton Brown’s Lentil Soup

Another new broccoli salad! Why? It looked unique with interesting flavors. Verdict…not as good as other ones in the past…more prep, more expensive. I have others that are much better.

Broccoli Salad

I tried a new hummus. One of my favorite websites is Once Upon a Chef. I can’t tell you how any of her recipes have becomre family favorites. Today she emailed a link to her favorite dips. This is one of the them and it is creamy deliciousness.

Hummus

I enjoy making a more exciting side when I have dinner guests, especially when they combine flavors that will complement my entree. Who better than to rely on…Ina Garten! This broccoli was great with the salmon with depth of flavor.

Ina’s Parmesan Roasted Broccoli

How do you made a frozen Trader Joes’s New York cheesecake more like homemade…make a strawberry topping

Strawberry Topping for Cheesecake

Sooo refreshing. The only change that I made was using lime zest and lime juice in the place of lemon.

Watermelon Feta Mint Salad

Yet once again a quick prep tried and true cook once/eat several times entree. Normally I have preprepared quinoa in the freezer, but tonight made the quinoa as directed using vegetable broth in the place of water. Game changer… I will continue doing this in the future.

Quinoa Fiesta Enchilada Bake

Mississippi pot roast is a family favorite, using a chuck roast. For the second time I used a pork roast….this time a large pork loin from Butcher Box for a company dinner. A huge hit and I may use pork more often.

Recap

We had a great weekend with family and once again shared great food and conversation. I will admit in order to provide and enjoy a great deal of thought went into pre-preparation. I did prepare meals that were friendly to all types of dietary concerns allowing choices. Our eating adventures continue. Bon Appetit!
