2023 Week 33 Menu Plan

The 2023 week 33 menu plan is complete. We are having guests over the weekend so I am hoping to prep for the meals in advance. It takes the stress out of providing healthy meals and allows me to enjoy our company.

Breakfast

Our breakfast plan for the week consists of tried and true recipes that can feed a group and can be prepared in advance. I love it when I can simply pop something into the oven and have it ready at the appropriate time. All of these recipes can easily be reheated on additional days.

Lunch

Soups and salads are the focus for lunch. The soups can be made in advance as well as the salad dressing and prep of salad ingredients….then tossed together. I may make a quiche in advance as a back-up if needed. The only last minute offering will be the pizza quesadillas…but they are fairly easy.

The dinner entrees are family favorites. My only concern will be the sides for each meal. An additional big decision will be whether to make a dessert. Costco might come to the rescue.

Hits and Misses

I love it when I find a super healthy, super quick breakfast to prepare in advance, especially when I remember to do it right before retiring for the night. This is it and the ‘Ole Buckeye says to add it to the rotation.

Superfood Overnight Oatmeal

Another lunch salad repeat that is refreshingly delicious in the summer. 

Mediterranean Quinoa Salad

I simply need to remember to make this more often. This should be my “go to” lunch. It is delicious served on toasted Ezekiel bread with a slice of lettuce and tomato.

“No Tuna” Salad Sandwich

This is the second time I have made this dish. It will be repeated often for several reasons. First is the ease of preparation. Second is a way to use up fresh spinach when it is past the point of use in a salad. The third is finding a Barilla Chickpea Orzo! By avoiding regular orzo pasta this dish not only becomes more healthy, but is packed with additional protein.

Dump and Bake Vegan Tuscan Orzo

This is yet another great kale salad! I used less honey than called for and sugar free dried cranberries. I love kale salads because they maintain their flavor and texture for eat again.

Once again I am late putting this plan together and posting. Hopefully I have created thoughtful menus that allows good family time with little time in the kitchen and minimal clean up. Sharing meals together is so much a part of memorable family times. The journey continues. Bon Appetit!
