The 2023 week 2 menu plan is complete.
Last week this email crossed my path…”Looking for a few good-for-you recipes to add to your weekly rotation? These are the ones Food Network fans love the most…Our 50 Most Popular Healthy Recipes.” It didn’t take me long to determine my menu plan. The 2023 week 2 plan consists of recipes taken from Food Network.
Breakfast
These are all new recipes, several of which are made in advance.
No Cook Blueberry Almond Oatmeal (Overnight)
Lunch
There are a wide variety of lunch choices. I am guessing that several will be cook once/eat again options.
Dinner
The largest variety of meal choices comes in the evening. The menu features soup, sandwiches and pasta along with salmon two ways and an interesting vegetarian stuffed pepper recipe. I have also included 2 spinach sides because I have a large container of spinach that needs to be utilized.

Hits and Misses
This is one of my favorite plant based breakfasts for many reasons…the flavor, the ease of preparation and the fact that is services several mornings. This is also a great time share breakfast.
Maple Pecan Baked Oatmeal (Plant Based)
For those of us that love Greek food, this is a winner. The depth of flavor is amazing. It did not need the sprinkling of feta, but the ‘Ole Buckeye loved the addition.

Recap
The menu plan from last week faced massive adjustments. We were involved in taking care of our Granddaughter and preparing family meals acceptable for her recovery from oral surgery. Adjustments were made and while we still had enjoyable family meals together, we definitely did not follow the menu plan. We have an entirely new focus for the week ahead, but will return to several of the planned meals in the future. The journey toward heathcontinues. Bon Appetit!
