2022 Week 51 Menu Plan Aruba

The 2022 week 51 menu plan takes us to time share eating in Aruba. I have loosely planned our meals and made reservations at several restaurants for dinner. By doing so I can pack the spices and some ingredients that will be needed in lieu of purchasing everything at the grocery store when we arrive.

Breakfast

The breakfasts planned will feed everyone in the morning or a few on multiple mornings depending on who wants breakfast. I am taking the oatmeal, flax seed, baking powder, maple syrup, nuts, and spices leaving only fresh fruit and almond milk for purchase. I am taking cooked sausage (frozen) for the egg casserole and will purchase the eggs and cheese in Aruba. The Creme Brûlée French toast is a tradition on either Christmas Eve or Christmas morning. I will pack the brown sugar and corn syrup.

Lunch

Lunch in Aruba is often “on the fly” with everyone eating when and what they want. I have planned several lunches that can be eaten at any time once prepared. They can also be used as a side with dinner or an appetizer at Happy Hour making them extremely versatile. Last year we discovered Edwardo’s and several other beach hut eats that serve healthy breakfasts, snacks, and lunches. I am certain we will partake of their delicious options once again. Again I am packing ingredients for the menu.

Hits and Misses

What a great holiday breakfast. I use swerve brown sugar but the rest of the recipe was as written. The next time I will use less of the sweetness, but this is YUM! We really enjoy the consistency of farro.

Roasted Cranberry, Maple, and Brown Sugar Farro

Zuppa Toscana…always delicious. It is one of our favorite Trim Healthy Mama recipes from their THM Cookbook.

Oh so easy and delicious…although this time it was a little dry and chewy, no explanation but the flavor was great.

Asiago Chicken

For years I ordered this at our favorite Greek restaurant in Chicago. I was so excited when I found this recipe. You will question feta and shrimp…but believe me it is delish!

Recap

Our Christmas week in Aruba is here and what a week we will have…away from the wintery blast and with family. We will eat, drink, and be merry. Merry Christmas and Bon Appetit!
