The 2022 week 48 menu plan is complete….finally! Coming off of the Thanksgiving week with two festive meals and decorating the house for Christmas left little time for meal planning. But you know what…on Tuesday I was floundering. I had no idea what I was going to make and on top of that did not plan my preparation time well. Planning is the only way I can survive especially with the goal of making healthy meals. So the 2022 week 48 menu plan has arrived.
I must add that on Black Friday I ordered Butcher Box. I have been reading about the service for quite some time and decided to take the plunge. It is recommended by several of the blogs that I follow. It has been difficult for me to source grass fed/grass finished beef. ButcherBox delivers 100% grass-fed beef, free-range organic chicken, humanely raised pork, and wild-caught seafood directly to my door. The first box arrived on Monday afternoon, which led to a completely different meal plan. I ordered a custom box which included beef, chicken, pork, shrimp, and salmon. I want to evaluate the quality as well as how well we will incorporate the month’s offering into our meals.
Breakfast
The breakfast plan for the week consists of tried and true favorites that are easily prepared and rotation worthy.

Lunch
Can you tell that I have left over turkey? It is chopped and in the freezer ready for soup and I have found two new recipes that sound both different and healthy.
Dinner
Several eat again meals are planned which will make it an easier week to manage as I continue to decorate the house for the holidays. I have a freezer full of assorted meats and would like to utilize some of them in order to make room for the Butcher Box delivery. Both the Italian sausage and pot roast meals will make way for order.

A new prep for brussels sprouts which was very good and worth repetition.
Roasted Brussels Sprouts with Balsamic and Honey
This is a great quickly prepared dinner with flavors that are surprising with such a short prep time. The ‘Ole Buckeye was not a fan to the bucatini because he felt it was difficult to eat. The next time (and there will be a “next time”) I will choose a different pasta…a chick pea or quinoa pasta. The sauce was delicious.
Vegan Sun Dried Tomato, Basil and Balsamic Bucatini
You do not miss the beef! This is delicious. I used real sour cream since it was leftover from the Thanksgiving feast. I did add paprika for extra flavor and served it over a chickpea pasta. A big plus…it is an eat again entree.

We have come off of a busy week…holidays, family, football (ugh) and decorating our home for Christmas. I will admit…when I get busy with the fa la la, I don’t spend a lot of time in the kitchen. Well…the decorating is complete and now we can relax, enjoy, and engage once again in preparing healthy meals. Bon Appetit!
