The 2022 week 29 plant based menu is complete and will feature many new recipes for breakfasts, lunches, and dinners.
Breakfast
I have prepared the maple pecan oatmeal in the past and we thoroughly enjoyed it. The Banana bead is new as is a new take on a chia seed breakfast. I have found that if I do not have something prepared we fall back on either regular rolled oats or avocado toast…both of which are always on hand and available.

Lunch
I am alternating between soups and salads during the upcoming week. I have a great recipe for split pea soup, but this new one sounds quite good as well. All three of the new salads sound intriguing and hopefully will be cook once/eat again offerings.

Dinner
Dinner relies heavily on pasta, but that being said I do try to use either whole grain or plant based pastas. I also intend to use whole grain English muffins for the black bean burgers.

To be perfectly truthful, I did not spend a lot of time developing this menu plan. I have been collecting recipes for months which I have not had the opportunity to prepare. Even though my main dishes have been planned, I often struggle with the sides and salads. I am guessing that will be no different during the week ahead. I need to spend more time developing easy to prepare accompaniments for the planned dinners.
We had an extremely enjoyable trip to Boston. The weather was great aside from 2 very warm days and the food was outstanding. I will not lie. We did not adhere to a strict plant based diet, although we did try to eat healthy while still enjoying the fabulous Italian dishes and the wonderful seafood selections. We also splurged on Boston cream pie and cannoli. But now we are back to our new normal with an interesting plant based menu planned for the week ahead. The adventure continues! Bon Appetit!
