Here we go with the 2022 week 18 menu plan and because I have been a part of the Food Revolution Summit for the past week I have decided to transition to a whole food, plant based eating plan. It will be a very gradual process, but I am hoping that we can tackle this diet change. I will continue educating myself on the benefits, and continue convincing the ‘Ole Buckeye that this will be a very healthy change for us. I have a freezer full of meat and a refrigerator full of cheese and dairy, so this will be a very slow and steady process.
Breakfast
I have sausage muffins and breakfast cookies left over from our trip to DC. Aside from those I have planned the entire week to include plant based offerings for breakfast. Luckily we both enjoy oatmeal and I think it will be exciting to try so many versions.

Lunch
I made a broccoli quiche before our DC trip and it will comprise several lunches. Two new plant based lunches are planned and I am hoping they will be cook once/eat twice offerings.

The dinners during this transition will take a little more finesse. Having meatless entrees for the main meal will take a great deal of creativity to keep the ‘Ole Buckeye involved in the transition. The dinners planned for 2022 week 18 will feature one meatless meal and several meals housed in the freezer already prepared. I have included a recipe for hot tomato salad that will be a good side. The Shepherd’s pie is light on the meat and I plan to go very light with the cheese.

Hits and Misses
All of the meals planned and served during week 17 were repeats of successful recipes. The adventure in eating during the week was our experiences in various restaurants on our road trip. Hopefully I will include them in a future blog post.
Recap
Week 18 ushers in a new way of thinking about food and its’ relationship to our over all health. It is the perfect time to try a more plant based diet as we go into the spring and summer season with more fresh produce available. As always…eating is an adventure! Bon Appetit!
