Dinner
During 2022 week 10 I have several leftover entrees housed in the freezer as well as the refrigerator and this is an opportunity to utilize them. Last week I made the pork chops with capers in place of the pork tenderloin. There were 2 tenderloins in the package and I did not want to thaw that many. The end of this week I will be preparing dinner 2 nights for my son’s family. Our daughter in law will be out of town. I am making a favorite Mac/Cheese/Sausage casserole for them and then a pork tenderloin meal.

Hits and Misses
The verdict is still out on this salad. Supposedly it is a hot recipe on the internet. I served it with burgers last weekend at a family cook out. We were so full of burgers that the salad didn’t have a chance. I will serve it again this week and give it a fair review later.

I made this oatmeal recipe because I still had cranberries and wanted a good way to use them. Great oatmeal, but it made enough for an army. Luckily it reheats well.

One of my favorite meatball recipes of all time. I made a revision by replaceing the breadcrumbs with crushed pork rinds. This is a great cook once/eat again meal. So delicious and nutritious.

We love capers and for that reason I elected to try this recipe. The chops were moist but the sauce was overpowering…way to mustardy. Definitely a miss for our family. I will go back to the tried and true Emeril’s recipe.

Seared Pork Chops in Caper Sauce
Fresh beets from the Farmer’s Market, roasted and added to this spectacular salad. We have had this in the past and I had forgotten just how good it is. Love beets and they are great this time of the year.

Recap
We had another great week of healthy eating. I am fortunate to have several eat again meals for week 10. I am hosting book club and my book selection is Alice Waters and Chez Panisse. Over the next week I will be experimenting with an appetizer and a dessert to serve at our meeting. Of course I will utilize recipes from Chez Panisse…tall order. Wish me luck!
