The 2021 week 37 menu plan is complete. Ultimately the meals are simple and geared to utilize perishables in order to prepare for our upcoming trip. Unfortunately I am posting the plan late. Subsequently I have included the success of our Tuesday evening family dinner.

Breakfast
The plan for breakfast will be to finish the frittata and create a repeat oatmeal recipe using the ripe peaches I have on hand. In addition the Greek eggs on Saturday will finish up the eggs and a multitude of remaining vegetables. Finally the Sunday biscuits are in the freezer and will supply a quick breakfast on the way to the airport.
Lunch
Only one new recipe is planned for lunch and the gazpacho is a carry over from last week. Hopefully any leftovers can be frozen.
Dinner
Nothing new is planned for dinner this week. I am concentrating on cleaning out the refrigerator. My goal is to have zero waste when we leave for 12 days.
Hits
Our Sunday welcome home dinner featured Asiago Chicken and I tried a new recipe for the French green beans. The ‘Ole Buckeye found organic green beans at Costco. Maybe they were the best green beans I have ever had.
Family Dinner
A family dinner was thrown in at the last minute. Luckily I had a meat loaf in the freezer and a head of cabbage that needed to be used. I had made a peach cobbler weeks ago that I pulled from the freezer for dessert. Voila’…dinner.



I have had so many requests for my glorified cabbage lately that I will just post an image of the recipe card. First I must explain the changes I have made over time. I no longer use the soup in the recipe, nor the bread crumbs…they are not needed. As a result the recipe is more compliant with our eating plan. For the first time I added a few tablespoons of heavy cream and 1/2 cup of Pepper Jack cheese to pair better with the meatloaf. Dinner was a success!


Recap
Ultimately we had a great week. We welcomed home our daughter after 7 weeks and then the entire family got together for an evening of great eating and a sunset cruise with the dolphins. Life is good. Bon Appetit.
