The 2020 week 11 menu plan is filled with favorites, including a meal celebrating St Patrick’s Day. I have little interest in experiments, but want to focus on meals we truly enjoy.
Breakfast
The breakfasts planned for 2020 week 11 are totally focused on E meals. Each and every breakfast planned is a favorite, a cook once/eat again preparation and can be easily frozen for future grab and goes.
Lunch
The lunches planned for the week are a little less aggressive than they have been over the past several weeks. In fact they are filled with left over soup from lunch last week and salad from dinner. I am not a huge fan of fixing a complicated mid day meal, which I have done for the past months. I made a lot of soups, which fed us for multiple meals, but took a lot of preparation.
Dinner
The 2020 week 11 dinner menu has two eat again meals, one from last week, and one from the freezer. For the past several years I have made corned beef and cabbage for St Patrick’s Day. This year we will have it on Sunday. My daughter ordered from Green Chef and will be fixing the Blackened Shrimp when it arrives. Whenever this shrimp is an option she orders it because we enjoy it so much. The Mississippi pot roast moved to this week. (Our night out last week supplied enough leftovers for a second meal.) That’s always a big plus!

Years ago I made a hot chicken salad from a recipe given me by a Colonel’s wife when I was newly married and attending a variety of military wives’ luncheons. I made it often then, but had lost track of the recipe. This one from Paula Deen is basically the same. I did not use potato chips as a topping, but did use crushed parmesan Whisps.
I will admit to trying a multitude of chicken recipes. While there have been many successful meals, it has become more and more difficult to find new additions that make it onto a meal rotation. This one, although good, will not make the cut. Not only was the flavor below expectations, but the prep time was not worth the result.
Later in the week we enjoyed this as an eat again meal…much more enjoyable. So often a reheat is better than the original. Who knew?
Enjoyable, but not necessarily repeatable.
Cheesy Baked Chicken Breasts with Mushrooms
The most successful meal last week was the Greek Pork Chops. I have a great pork chop recipe already. In fact I almost reverted to that recipe instead of experimenting. Luckily I stuck with the menu plan. These pork chops were exceptionally well seasoned, moist and delicious.

We ate well last week and look forward to next. As always we stay flexible depending on schedule. 2020 week 11 is not very adventurous, but I look forward to proven recipes and enjoyable, healthy eating. Bon Appetit!
