So, we have finished our second week of preparing meals to incorporate the needs of a diabetic. The One has now been to the doctor and is monitoring blood sugar levels. Those levels have been cut in half with dietary changes but medication has been started to help bring them to normal levels. A nutritionist has given advice but basically has reiterated and supported what we are doing currently. Good to know.
Day 1 called for Chicken Pot Pie from Peace Love and Low Carb. This was an interesting recipe that we plan to revise in future. The crust is basically cheese with almond flour and spices. It is good enough to repeat for the crust but we will make our more typical homemade chicken pot pie filling. The filling from the recipe was too loose and runny. We longed for a nice thick gravy for the ingredients. We would also add significantly more vegetables.
Day 2 Taco and Burrito night. Always a hit. AND a portable quesadilla can be made for the guys going off to hockey to be eaten on the run.
Day 3 Big Mac Casserole from Peace Love and Low Carb. Another recipe that we liked but think we can make it one to love by deconstructing it and serving the ingredients as a salad (kind of taco salad style) with the thousand island dressing drizzled over the top.

Day 5 Peanut Chicken Skillet from Peace Love and Low Carb Another hit. Another recipe to save for the rotation. Adults and kids loved it.

Day 6 Beef Stroganoff Soup from Peace Love and Low Carb. A flop. To be fair to the site, we messed with this recipe by not adding the dairy until the end. The dairy curdled even after being tempered. Our fault. The result was a gray, runny, unappealing soup.
Day 7 Cobb Salad. Another hit, but it always is around here. The kids love going to the “salad bar” and building their own salads. It will continue to be a regular occurrence around here.
So, week two ends with better health results and a number of healthy meals added to our repertoire. Breakfast and lunch options are also added to the menu, with packed lunches happening most days. We are on our way!
