The 2022 week 5 menu plan is complete.
Breakfast
The breakfasts planned for 2022 week 5 are repeats of favorites. They are favorites for a reason. The reason being…they are cook once/eat again meals. These recipes make for well planned breakfasts over the course of the week without lots of preparation time in the kitchen.

Lunch
There are lots of new recipes planned for lunches. I am particularly excited about the Gyros. A trip to Trader Joes last week was initiated after a gyro meat recipe caught my eye several weeks ago. I will use pita bread in place of naan. Can’t wait to try these. Gyros are a favorite of ours. The soup recipes are both new and appear to be easy to make. Hopefully they will serve several meals.

Dinner
Dinner plans are tried and true offerings with one new creation. Carbonara is a family favorite that I seldom make because it does not fit the eating plan. I am excited to try the spaghetti squash version in hopes that we can enjoy carbonara more often. The ham and beans meal is certainly not on plan, but it is great childhood favorite comfort food and I have ham hocks taking up space in the freezer. We will have Amy’s great soup accompanied by pizza on Sunday.

Hits and Misses
One of our all time favorite breakfasts, brunches or lunches is this frittata. I have revised the recipe by omitting the potatoes and it is company worthy. Normally I dust it with cilantro, but the ‘Ole Buckeye adds nothing. I do add a selection of condiments when serving company including sour cream, avocado, cilantro and diced tomato. Yum.
There were a few adjustments to this slow cooker soup. I added more chicken stock because my version was more like a thick stew (stoup) as Rachael Ray would call it. I used rotisserie chicken (mainly dark meat) in place of turkey, but this would be a terrific recipe after Thanksgiving. It was served with grated cheddar and cilantro and we truly enjoyed it.
Recap
I will admit that I didn’t spend much time in the kitchen last week…cooking that is. That certainly didn’t mean that we didn’t eat well. Our meals stretched a long way and it gave me a day in the kitchen to reorganize the pantry. Now I have decided to reorganize several other areas of the kitchen for better function. It will be a big job, but I am hoping in the end it will offer better function. Reorganizing and good cooking…the kitchen will be busy. Bon Appetit.
