Week 73 Menu Plan with Trim Healthy Mama
The menu plan for week 73 is complete. It will be interesting to see if it is completely implemented. The winter storm that hit the East Coast the end of last week hit our area with just under 11 inches of snow and as I write this on Tuesday afternoon the schools remain closed and the snow and ice packed roads are just beginning to melt. Living in coastal Virginia during a winter snow storm is a far cry from our experiences in Chicago. The snow remains on all side roads and residential areas until it melts, making getting out a difficult adventure.
We had planned a road trip to Atlanta this week, but the condition of the roads have held us in limbo. In addition there has been no school, making it possible for us to spend time with the Grandgirls since the P’s needed to work. Since our time is flexible we continue to hope to get away for a few days, especially since we have felt very cooped up.
I have planned a week of eating, but this plan is just as flexible as our schedule. The groceries are on hand, but meals planned for week 73 can certainly be moved forward.
The breakfast casserole found in the original Trim Healthy Mama cookbook page 238
proved to be very good, but not as good as the easy breakfast casserole in the new cookbook on page 328. The luxury of both of these recipes is that they are cook once/eat multi and are just as good reheated as the first day prepared.
Since blackberries have been extraordinarily inexpensive, I have decided to try the giant pancake with blackberries instead of blueberries. Hopefully it will be a successful modification. I know that the blackberries will be less sweet, but I do not plan to modify the sweetness in the recipe on the first try. The Giant Blueberry Pancake is a true favorite. I made a change last week and prepared it in two separate pie pans instead of a 9 x 13. I will do that again in the future as well. I can freeze one for later use.
The lunches planned for week 73 are filled with favorites, and include one new addition, the white chicken chili, a recipe that looks quite promising.
Crockpot Taco Soup Family Favorite and Oh so Easy!
The dinner menu for week 73 has two new recipes planned. The cowboy grub recipe in the Trim Healthy Mama original cookbook has been of interest for some time. The twice baked spaghetti squash was prepared on a segment of “The Kitchen” on Food Network last week and caught my attention. The pork loin has taken up space in my freezer and needs to be prepared. In the back of my mind I may make this a family dinner on Sunday. No invites issued as yet.

Yet another week of eating the THM way lays ahead. I continue to feel energized. What amazes me the most during this process is the exciting new recipes that have evolved and are now true favorites. The repeat of the white lazy lasagna made me realize just how glad I am to be experimenting with low carb recipes. We thoroughly enjoyed this meal once again and will continue to have it often.
I should review a few items from last weeks plan. The Crispy Chicken Cheese Quesadillas were disappointing. I have plenty of other recipes that far outshine this one. It needed more cheese and more flavor.
One family favorite of ours is Sriracha Meatballs. This time I used fresh spinach. Next time I will revert back to frozen spinach, it was definitely a better meatball that way.
What more can I say about the White Lazy Lasagna…a 10!
