2021 Week 41 Menu Plan
The 2021 week 41 menu plan is complete. We will be spending the week at Marriott Ocean Watch, Myrtle Beach, South Carolina. We will have a villa with a kitchen so the menu plan includes “cook in” meals as well as taking advantage of a few of the hundreds of restaurants in the area. The 17 year old will be joining us for 3 days and we plan to choose a few restaurants that we think she will enjoy.
Breakfast
I am planning only one breakfast out, which will actually be brunch at Drift. The plan is that the Sunday brunch takes care of two meals. I am taking the chia pudding as a back up and/or snack.

Lunch
The lunches planned include the quesadillas, a favorite of our granddaughter’s and a new quick soup that looks good enough to try. Lunches will be rounded out with brunch and a stop in Georgetown, SC on our way to Charleston. We plan to extend our trip with 3 days in Charleston if the weather looks good. That decision will be made at the last minute.
Dinner
Although the key to enjoying a trip away from home is always discovering new restaurants, I do plan 2 “eat in” dinners. The food prep for those evenings is super easy and the leftovers will be available for lunches later in the week.

Hits and Misses
Breakfast
I will need to classify this Chia Pudding as a miss…it was way to liquidy and more of a beverage than a pudding. However the flavor was very enjoyable which will lead me to find additional recipes for future trials.
Wow! Let me just say that the only reason I added this new recipe was because I had all of the ingredients on hand and the avocados were ripe and needed to be used. The methodology of scrambling the eggs was very different, but I did everything as directed. Outstanding for a quick healthy breakfast…and the ‘Ole Buckeye agrees. This will be on a permanent rotation and added to our timeshare breakfasts!
I have several breakfast muffin recipes. In fact I have enough that I don’t really need to try more, bot both of these muffins are ‘Ole Buckeye approved. I love having these on hand making it possible to always have a breakfast option for him, even if I skip.
Lunch
This spinach salad was a really good one, however the next time I make it I will not mix the salad together (all of the ingredients went to the bottom of the bowl under the spinach.) The next time I will prepare individual plates and put the berries, nuts, and feta over the top. We added our own dressing as desired and that was a good call. It doesn’t take a lot of dressing to compliment the salad, and I loved the dressing flavor with the feta. I did add chopped avocado to the salad since I had one on hand.
The fritters were “fine” but definitely not rotation worthy. They were relatively labor and ingredient intensive.
Dinner
This casserole although many reviewers loved it was bland and not exciting at all. The saving grace was the spinach, which was very flavorful. We mixed them together and had a delightful dinner. On their own, neither would be repeated.

Recap
After no travel for a long while, we have jam packed the fall with lots of trips. The meal planning is almost as much of an adventure as the travel. We look forward to trying new meals in new places, while trying to maintain a healthy eating plan. Myrtle Beach…here we come! Bon Appetit!
