The 2022 week 3 menu plan is complete.
Breakfast
The 2022 week 3 breakfast plan includes several favorites and one new recipe. The pudding caused some raised eyebrows from the ‘Ole Buckeye, but I want to try it anyway.
Banana Split Chia Seed Pudding
I will make revisions in the pudding…using fat free yogurt, sugarfree maple syrup, no chocolate and very little coconut (a garnish). This should make it a THM E
Field Berry Oatmeal THM E
Lunch
I love leftovers…especially for lunches! I plan a repeat of the “sliders” because I still have the sauce and didn’t want to throw it away. There is enough ready to use fresh broccoli to make our favorite quiche.

Dinner
Several weeks ago I purchased a pork butt on sale and now I plan to combine 2 recipes over the weekend. The Greek meatballs are a new recipe that sounds not only healthy but delicious. I am adapting the chicken Marsala by combining part of the recipe and using a bottle of Wildtree Marsala sauce which has been hanging out in the pantry.

I am using baking blend in place of flour and the Marsala sauce is sugar free and low carb.

Hits and Misses
What to serve when you have jalapeƱos that need to be utilized?…this soup. The only drawback was the fact that the recipe does not make a big batch of soup. When I make soup I want it to service several lunches. I was lucky to get 2 lunches out of this one. Enjoyable however.
Jalapeno Chicken Bacon Chowder
One of the very first new recipes I collected when we moved to Virginia was for Baked Ham and Cheese Party Sandwiches. They were served at a community Wine Night and I could not get enough. After just a little research I found the recipe. Obviously these little squares of deliciousness do not fit into the THM eating plan. That being said you can understand why I was so intrigued by this recipe for slider wraps. Although the Hawaiian rolls are replaced by low carb wraps, the wonderful flavor is still there. For my first experiment I used “snack” size low carb wraps which I purchased on a whim. We enjoyed 2 of these for lunch…filling and delish!
Poppy Seed Ham and Cheese Slider Wraps
This soup is a favorite and serves us several lunches. Part of the reason I like it is that I can use the dark meat I save from the Costco Rotisserie chicken. So many of my recipes call for the white meat…this is a great way to utilize the dark meat.
Recap
Last week’s meals were back on track with the eating plan I want to follow. I will admit that several evenings included off plan sweets left over from the holidays…I absolutely refuse to throw the deliciousness away. We ended several evenings with truffles, peanut brittle, and popcorn balls. I call it holiday extension..let’s get rid of it and get 100% back on plan. Bon Appetit!
