2021 Week 25 Menu Plan
The 2021 week 25 menu plan is complete.
Breakfast
The breakfast menu consists of all repeat offerings, except the new bacon and veggie loaded casserole. In fact I made it in advance to have it available for busy future mornings.
Bacon Veggie Loaded Egg Casserole
Lunch
The lunches are all new and I look forward to their diversity. Hopefully they will provide eat again meals because I am counting on that all week.
Sweet and Smoky Chipotle Chili
Thai Chicken Salad with Peanut Dressing
Dinner
The dinners planned are new aside from the Greek turkey burgers and the gourmet burgers.
Hits and Misses
I got up early and prepared a favorite of the ‘Ole Buckeye’s for Fathers’ Day breakfast. As always it was totally satisfying comfort food and a true fill you up breakfast and Keto.
One of my favorite pasta dishes is Peasant tortellini which consists of cheese filled tortellini tossed in a cream sauce with capicola ham, peas, and mushrooms. If it is on the menu at a good Italian restaurant…that is what I order…diet or no diet. When I saw this recipe, I knew I needed to give it a try. Obviously it was not as decadent as my favorite…but it was quite tasty for a low carb recipe. Next time I will add more peas. This is definitely more of a side than an entree.
Spaghetti Squash Alfredo with Pancetta and Peas
We enjoyed two new Green Chef meals…both very good, but the Steak and Balsamic mushrooms was one of the best Green Chef offerings we have had. If it is on the menu in the future, we will definitely have it again.
Barramundi with Chipotle Lime Aioli
Green Chef Steak and Balsamic Mushrooms
There was a change of plans on Father’s Day for dinner. Our son did a brisket in the Green Egg…with his legendary rub.
I elected to do the sides I supplied the sides…broccoli salad, baked beans, glorified cabbage, corn on the cob, and deviled eggs, and our daughter purchased a fresh peach pie from Flour Child. Great dinner celebration.
Recap
Even though there were lots of menu changes last week due to high school soccer games, we managed to eat well and enjoy the games. The Cox team made it to regional finals, but lost 4-1. It was a wonderful season of soccer and we were so blessed to watch both of our grand daughters play.
We are back to a more normal routine. The menu planned is more industrious than the past weeks. I need to get back into a cooking routine. We look forward to a week of healthy eating. Bon Appetit.
