2021 Week 27 Menu Plan
The 2021 week 27 menu plan is complete and reflects a major change of plans during week 26. We had the privilege of attending the naval retirement of a special family at the Naval Academy, Annapolis. It was a last minute decision and I am so glad that we went. Obviously many of the meals planned over the holiday weekend have been moved to week 27.
Breakfast
The 2021 week 27 breakfast plan is almost the mirror image of week 26. On one meal prep day last week I made the berry cobbler, the peach upside down oatmeal and the BAM cake. Believe me when I say it was out of necessity not a burst of productivity The fruit was all very ripe and needed to be used. When we knew we would be traveling , I froze the entire BAM cake and refrigerated the others ready for this week.
Lunch
The lunch menu may look familiar as well. We still have enough chili for one meal and the ingredients for a repeat of the Thai chicken salad. I never made the taco pie last week, so we will have it this week. The one new recipe is for the Stuffed Portobello Mushrooms and I always have the ingredients on hand for the pizza quesadillas.
Dinner
Ribs were on sale over the holiday and originally planned for the 4th of July. We had burgers with the family instead, so will enjoy ribs this week.
Hits and Misses
I prepared all of the breakfast offerings during a very busy prep day. They are favorites, and luckily they reheat and freeze well. We have all of them on hand to enjoy during week 27.
I tried a new low carb sloppy Joe recipe forgetting that I already had a favorite saved on my pinterest board (which I have not made in quite some time). Although this recipe was fine…the other one is much better…so I will classify this as a miss and revert back to a previous favorite.
Family favorite…
Well this was a pleasant surprise! I served this new low carb salad with burgers on the 4th for a adult family gathering and it was a hit. I added more fresh dill, used regular Dukes mayo and gerkins (for the ‘Ole Buckeye.) Great salad.
This broccoli salad has fast become our favorite. I use smaller florets and it is easier to eat. Excellent over multiple meals. I use dried cranberries in place of raisins.
Recap
I have realized over these past years that it pays to be flexible. Some of our newest and most memorable experiences have been enjoyed because we embraced a change of plans. The Mello’s a career naval family had a retirement ceremony and renewal of vows on Saturday. They emailed my son and his wife asking why the ‘Ole Buckeye and I had not RSVP’d. Apparently they did not have our email and we did not receive the evite. At the very last minute we decided to attend.
On July 1 I prepped all of the ingredients for salads for the 4th and ordered burgers from Harris Teeter. We had already ordered a mixed berry pie. On Friday we drove to Annapolis with our son and daughter in law and returned home on the 4th in time to enjoy a family dinner in the courtyard. A memorable 4th of July weekend it was.
Our quest for healthy eating continues. Even more is our quest for quality time with family and friends. I hope your Independence Day celebration was as special as ours. Bon Appetit!
