2021 Week 29 Menu Plan
The 2021 week 29 menu plan is complete and as in the past contains meals planned last week. Plans are fluid. Our daughter made an artichoke chicken casserole on Monday, which moved the White Lazy Lasagna into week 29.
Breakfast
The 2021 week 29 breakfast plan is filled with cook once/eat again offerings as well as favorites that I like to keep on a rotation. I am also planning an E meal each day, either at breakfast or lunch with the exception of Sunday.

Lunches for this week are all repeats of favorites except the Mexican Quinoa which is new. I also plan to make a quiche and pop it into the freezer to utilize some of the broccoli I have on hand.

The recipe for Firecracker chicken meatballs is the only new meal planned for the week. Eat again meals and grilled burgers and steaks round out the week.

Breakfast
A family favorite which I have not made for a long time is this easy E breakfast. The textures and flavors are spot on.
Bananas Foster French Toast Bake
The cherry crisp caught my eye because the ‘Ole Buckeye likes cherries. The topping was dry, too dry and adding the yogurt didn’t really help. This one will qualify as a miss!
Wow…these zucchini muffins are great…even cold. What a tasty treat to have on hand not only for breakfast, but for a quick snack. Great for a grab and go!
Lunch
This a great standby lunch if you stock your pantry and keep cooked chicken in the freezer. You can easily add extra protein with a dollop of fat free Greek yogurt and extra freshness with fresh cilantro. It easily feeds us for several lunches.
We had a last minute change on Saturday. The 15 year old is going off to camp for 2 weeks and wanted to spend time with us before she left. We offered lunch, happy hour or dinner. Their schedule called for a family lunch…decided late Friday night. I decided to do the planned Taco Crunch Salad and in addition add a favorite frittata to make it a more complete special lunch. Success. Great lunch and plenty of food. My only regret…I did not have time to create a dessert. The grand girls LOVE dessert.
(As it turns out…lunch was so filling that the ‘Ole Buckeye and I simply had leftover sausage parmesan cream cheese soup for dinner and the girls went out for ice cream!)
Dinner
All season I have been growing Thai basil and have only used it once until now. Lots of this fresh herb went into this succulent dish. I modified the recipe by eliminating the Asian sweet chili sauce…I realized I was out, but I don’t think it changed the flavor very much, because we enjoy the heat. Zanthum 1/4 tsp replaced the cornstarch. I did serve this over rice which is a huge no/no on low carb, but I was out of cauliflower rice and it was too late to make a grocery run. This is a great recipe. I have two other recipes for Thai basil chicken that I considered…maybe I will review them and try one or both in the future.
This dinner is my Instant Pot favorite. I had forgotten how delicious and filling it is. I served it with THM 15 minute focaccia.
Sausage Parmesan Cream Cheese Soup
I selected yet another baked chicken recipe purely due to the ease of preparation. Only a few ingredients and voila it went into the oven. The breasts that I used were quite large and made for overwhelming portions. While this chicken was tasty, it will not hit the rotation. In fact the ‘Ole Buckeye and I made a list of rotation worthy chicken meals while dining on the so called “World’s Best Chicken”, but that will require a future blog post. I served the chicken with a recommended side linked in the recipe post. (I used Lakanto keto maple syrup in these recipes.)
