Menu Plan Week 67 with Trim Healthy Mama
The meal plan for week 67 will be short and sweet, since we are planning a road trip once again. It is a tradition to spend Thanksgiving in Ohio with family. This will be the first trip that we have made from Virginia without spending additional time in the area. It will be a quick round trip. From past experience we have learned that traveling on Wednesday, Thanksgiving Eve, can be a nightmare. We have decided to do the bulk of the driving on Tuesday. We plan to return home no later than the start time of the Michigan vs. Ohio State Game at noon on Saturday. So many miles…so little time.
That being said, my meal plan for week 67 will only include Saturday through Tuesday. Since I have a Thanksgiving dinner planned for our immediate family on Monday, things will get really busy around here when we return. I have the meals planned, but the grocery shopping remains to be done. In addition, I plan to begin holiday decorating! You know what they say, “The best laid plans…”
Breakfasts for week 67 will include one of our favorites, Shakshuka, and a new recipe from THM for sausage and biscuits. Oh how I love sausage and biscuits and when I found a recipe that fit within the THM eating plan, I was hell bent to put it into my menu plan.
I also plan to prep ahead another deep dish apple pancake, a recipe that has proven to be a big hit at our house. In fact I will be adding it to the time share menu plan for our Christmas trip.
My plan for lunches when we return calls for the usage of a big bag of broccoli that remains from a previous Costco run. Hopefully when we return I can pull together the Crustless Broccoli Quiche before we watch the big game. The stuffed pepper soup recipe caught my eye several weeks ago and should be a good cook once/eat several for the next few days.
The plan for dinners aside from the menu for our family Thanksgiving celebration on Monday, is built around the need to utilize zucchini in the crisper and a spaghetti squash that waits to be incorporated into something new. Both of the recipes I have picked are new and look interesting.
All of my meals aside from the family Thanksgiving dinner follow the Trim Healthy Mama eating plan. I have decided that our Thanksgiving meal needs to be built on traditional family favorites. Many are compliant, but I am not going to worry about being exact. The evening together is too important and each person here will expect certain favorites to be incorporated. I will decide once the meal is served whether I will stay on plan or cheat.
Lest we forget…we have a celebration planned. Thanksgiving Dinner with the family. A special evening planned to bring us together.
