Hits and Misses Week #12
Week #12 brought lots of good eating. Beautiful warm weather allowed our plan to grill outdoors on Monday evening. Over the years marinated flank steak has become one of our favorites, and Monday’s feast was no exception. The steak served with grilled avocados, and a tossed salad was a reminder that outdoor cooking would soon be the norm.
Tuesday was a repeat of a recipe utilizing chicken thighs which we found extremely enjoyable several weeks ago. It was just as delicious as I remembered, and I have added it to our family favorites. This is a great recipe and I opt to make more than we can possibly eat at one sitting since it reheats so beautifully.
Chicken in Sun Dried Tomato Cream Sauce
Wednesday night was family night. The grand girls love meatballs as does our daughter in law. I made Greek Meatballs with Tzatziki Sauce, a Greek Salad and Zucchini Wedges
I have been working on this meatball recipe for sometime and it is still not perfected. The meatballs were slightly dry, but serving them with the homemade Tzatziki sauce certainly helped. The Greek salad is always a favorite.
Thursday held the addition of several new and intriguing recipes, Chicken Dijonnaise and Baked Parmesan Zucchini.
The ‘Ole Buckeye was not a fan of the chicken…”too mustardy”. (I tried to explain that that is the whole point…Dijonnaise!) Since the main ingredient in the sauce happens to be mustard, I will not be making this again. A Miss. Let me add a note here. We have so many outstanding chicken recipes, anything new must be extremely good to be repeated. I happened to enjoy this dish, but I don’t repeat any recipes unless we both find them delicious.
The baked parmesan was also a Miss. I guess I expected it to be crispy after looking at the imagery of the recipe post. Although flavorful, it was soft and spongy (which zucchini is). Once again, I have so many vegetable recipes that we enjoy including Zucchini, this will not be a repeat.
Friday and Saturday….Cha, Cha, Cha, Changes…
Friday evening we were left with an abundance of Greek Salad that needed to be eaten, while it was still good. We decided to have leftover Greek meatballs, Greek rice, Tzatziki, and Greek Salad. It proved to be a perfect meal to reheat and eat.
Saturday: We were invited to our son’s for Game Night, Burgers and Brats
Sunday…was a soccer game make up day. Dreary all morning, the game was scheduled for 3 in the afternoon. As we drove the 40 minutes to the game the rain began and it poured. We arrived in time for the start, but missed the first few minutes. The 6th grader scored the first goal and we just missed it! We had taken too much time to locate the field. The girls won, the weather cleared, and the heat and humidity set in. I have learned to layer…short sleeve, fleece, vest, windbreaker and rain jacket plus umbrella. Sometimes all are used in one hour.
Since it was after 5 by the time we arrived home and I realized that the California Spaghetti Salad needed at least 3 hours to chill, I decided to opt for leftover Sun Dried Tomato Chicken. Poor planning on my part, however that would leave the stuffed burgers for Monday evening when it was scheduled to be 80 degrees! After a busy afternoon, I was glad to reheat a delightful meal and leave the salad and burger prep for another day.
We had yet another week of good eating, but an even better week of family times. It is so interesting in life how often food brings us together. We just need to utilize the time around those meals to create memories.
