2021 Week 28 Menu Plan
The 2021 week 28 menu plan is complete! and…features a new format.
Breakfast
The breakfast plan for 2021 week 28 includes all Trim Healthy Mama E meals and includes new recipes for the Cherry Crisp, the Cinnamon Protein Pancakes and the Zucchini Muffins. We have enjoyed the cobbler and French toast in the past.

Lunch
I made this chicken salad last week, but continued to have all of the ingredients on hand, so I made it once again. This time I used Thai basil from my herb garden. This is a great unique chicken salad especially in the summer. The next time I might add edamame.
Thai Chicken Salad with Peanut Dressing
This Keto Pie was more of a miss than a hit. It was easy to make and certainly fed us for 2 meals, however the flavor was quite bland. If I make it again in the future, I will try to develop more flavor.
Dinner
We have had this recipe for baby backs before, but this time I simply used the rub…no sauce. Delish. I learned this from my son. A good rub and slow cook adds plenty of flavor without glopping on sauce. I will continue to prepare them this way in the future.
There was a sale on zucchini and I had plenty to use. I have made this casserole in the past and completely forgot about it. This is about as good as a zucchini side dish can be and was perfect with the ribs. Yum!

OMG! I died and went to heaven. This salmon was absolutely delicious and oh so easy. Luckily I had all the fresh herbs in my herb garden. This is a definite keeper and restaurant worthy…fine restaurant!
Slow Roasted Salmon with French Herb Salsa
What to do when you have tomatoes that are fairly tasteless and need to be used? I had pinned this recipe as a potential side dish or maybe even a lunch, but decided to serve it with our salmon. It was not really a miss, but not worth doing in the future. (Just a note…this got better when reheated and eaten with the pork chops.)
I have not tried a new recipe for pork chops in years, because we love Emeril’s recipe so much. Well I tried something new and these pork chops were delicious…maybe not quite as moist as Emeril’s but definately delicious and rotation worthy.
Dessert
Oh how I love strawberry rhubarb…anything. I so hoped that this recipe would be a success. Way too sweet. I will admit that we like things more tart and tangy, so for sweet dessert lovers this might be fine. I plan to make it again…it has great possibilities, but I will definitely curtail a lot of the sweetener.
Recap
All in all a great week of eating. We did skip the Asiago Chicken (which is in the freezer) because wild caught salmon was available and beautiful at Costco. I did elect to prepare it in a new way and am so very glad I did. Best salmon ever.
The 2021 week 28 menu plan requires a lot of cooking…in fact more cooking than I have done in quite some time. I also have several challenges to make intriguing recipes into meals that conform with our current eating plan. Hopefully I can do that successfully. Our journey to eat healthy and enjoy what we eat continues. Bon Appetit!
