2021 Week 30 Menu Plan
The 2021 week 30 menu plan is complete. I continue to feature at least one E meal each day.
Breakfast
The 2021 week 30 breakfast plan is filled with tried and true meals. The cinnamon protein pancakes are a new recipe that I had planned to make last week.

Lunch
The lunches planned for the week are repeats aside from the Mexican Quinoa which I had planned last week, but we had plenty of soup and left overs. We also treated ourselves to lunch on Friday at the Mermaid Winery.

Dinner
Aside from Mississippi Pot Roast all of the dinners planned are new recipes. The pork medallions will require some tweaking to make it on plan. I am also hoping to have eat again dinners for the ‘Ole Buckeye, because I will be out of town next week.

Hits and Misses
Breakfast
This berry cobbler continues to be a top favorite for breakfast or for dessert. By using THM baking blend it is a delicious fuel pull making it even more versatile. I use a combination of strawberries, raspberries, and blueberries. It is a great way to use up berries that are past their prime.
This keto (THM S) biscuit recipe is a favorite. On busy mornings these biscuits can be a life saver. They also travel well in the cooler when we are on a rode trip. A week from now I will be traveling. I hope to freeze a supply of meals for the ‘Ole Buckeye and these biscuits will be among them.
White Cheddar Sausage Biscuits
We have enjoyed this oatmeal in the past and it has become a favorite. I find that it is particularly helpful in utilizing berries that are past their prime, especially strawberries, since they are cooked with the oats. I do use less sweetener than is indicated.
Lunch
This recipe should be renamed since there are no potatoes in it and it is a filling low carb meal…maybe Fotato Soup. This is the second time it has appeared in our lunch rotation and it will continue to reappear. Although it takes time to prepare, it is worth it because it is a cook once/eat several times meal.
Dinner
Always a favorite…always on the rotation and a great cook once/eat again dinner.
I was worried that these meatballs might be too spicy. In fact I used half the amount of cayenne pepper called for. No worries, I could have used just as directed. I was a little nervous about using cauliflower rice, so I used regular rice. When I make these again, I will definitely use cauliflower rice. It is a unique and enjoyable change from routine meatballs. It will definitely appear again.
