Menu Plan Week 97 with Trim Healthy Mama

Wow, I am late posting my menu plan for week 97.  Actually I had the plan, I just didn’t have time to write the post.  I will assure you that this will be short, sweet and too the point.  After weeks of preparation for the “Bridal” Bunco that I hosted on Tuesday evening, I thought I would have plenty of time to blog…NOT.  There was the clean up, the grand girls soccer practice run, and the repair of my broken eye glasses.  I still have the return and restore to storage issue.  Sigh.

As I review the breakfast plans for week 97, I am relieved that the only new recipe planned is for Friday.  Friday actually looks to be the only day that there may be preparation time in the morning.

The lunches on the docket for week 97 include the taco pie which I made a week ago.  Our plans changed so I popped the dish in the freezer, which ends up being perfect for a week like this.  The only new one serving lunch planned is the pizza in a bowl for me. (the ‘Ole Buckeye volunteers at the USO).

The dinners planned for the week are family favs and the cook once/eat twice lifesavers.  I may be switching things around since I have a pontoon/beach party Thursday.  I am making a long time favorite beef stroganoff and a new and enticing recipe for shrimp (on sale last week at Kroger).

So there you have it.  Plans made and finally the post written.  I am looking forward to a more relaxed week of cooking and eating.  Who knows if that will actually happen.

I need to take a moment for a quick review of some hits and misses from last week.

I will just say…the experiment with overnight oats did not go well.  I am definitely not a fan of this recipe and most likely will not experiment with oatmeal prepared this way ever again.

I planned to make these pizza bites a few weeks ago when we were in charge of the grand girls as a lunch or a snack, but I never had the opportunity.  I decided to include this recipe again just to give it a try.  I was pleasantly surprised.  The ‘Ole Buckeye would have preferred a crispy crust pizza, but I enjoyed the flavors since “real” pizza is out of the question for me.  I cut up onion, red pepper, spinach, pepperoni, and cheese.  I found this to be an enjoyable and filling lunch.

Now for the soup…It was tasty, but would work better in a small cup or bowl as an appetizer before a red meat dinner, rather than a lunch entree.  The ‘Ole Buckeye was not a fan of the heavy garlic flavor.  The topping was an interesting addition although I did not include the bread crumbs.   I have so many great soup recipes.  This one will not be an addition.

And then there was the cheesecake.   OMG!  The best cheesecake ever…on or off plan.  Everyone loved it.  Let me just say at this point that it nearly was not made.  Our daughter in law invited the family to celebrate Father’s Day at their home.  We had not celebrated Father’s Day together since our son was in Key West and we were on a road trip.  Since I had a hectic week ahead I planned something simple.  My son loves cheesecake and the ‘Ole Buckeye loves snickers.  What can I say.  Guilt trip.  I made the cheesecake.  I am so glad that I did.  It was out of this world delicious!  A definite keeper.

Just a quick note about a really delicious way to roast broccoli.  We use a lot of broccoli and buy the big bags at Costco.  I am always looking for new recipes since often I need to use it up before it is past prime.  This quick recipe is outstanding.  (Just a note…I used 1/2 tablespoon of the spices rather than a full tablespoon…perfect)  Another keeper.

I had a busier than usual week and appreciated having a plan for cooking and eating.  Not only did I have the ingredients on hand, but I didn’t need to think.  The thinking was done.  All I needed to do was implement the writing of this post.  Done!
