The menu plan for week 119 will rely on leftovers and cleaning out the pantry, refrigerator and freezer. We will be taking a long anticipated trip followed by a cruise. The plan is to leave very little behind that might spoil. That is what I wrote days ago…before the busy-ness of the holidays took hold. You know…when you don’t know what day it is and are doing things that you don’t normally do…while exhausted. I have to admit that I have been really tired and I am retired! That being said, I am sharing my menu plan late…very late.
The breakfasts planned for week 119 rely on portions of remaining casseroles as well as an attempt to diminish the bacon and egg stores in the refrigerator.
The lunches planned are strictly leftovers. We have leftover chicken and potato salad, leftover pot roast and rib roast that must be eaten. We will be creative. No menu plan needed…just open the frig and find something interesting to eat.
The dinner plan for week 119 is leftover driven aside from the ribs on “game day”. There was an amazing sale on Baby Back ribs at my favorite market so they will go in the slow cooker for a special meal on Saturday. The rest of the meals will concentrate totally on eating what is on hand and doing it creatively! The chili is planned only if we run out of all other options!
So there you have it. Short and sweet. After cooking and preparing for the holidays, I am actually celebrating the fact that I have little preparation this week and can concentrate on packing and preparing for our upcoming trip.
At some point I will recap our amazing Christmas Eve Dinner. It was absolutely delicious and included nearly all new, interesting, untried recipes…all successful!
For now…I am inventorying the remaining food and getting it to the table. Every single meal should be enjoyable the second time, because it was so successful the first. If I am successful the refrigerator will be barren. Until then…
