The Menu Plan for week 87 is back to some basics. The week is heavy with commitments and I am hesitant to over plan with recipes that require much attention. We have also gotten much busier with outdoor work in preparation for a Secret Garden Walk the middle of May. (Why I get myself into these projects is beyond!)
The breakfasts planned for week 87 include a batch of breakfast cookies which I will also freeze for quick go-to meals in the future. The new addition to the line up is sausage and biscuits. They were on the menu plan several weeks ago, but never made it to the stovetop, let alone the table. I am finding that I enjoy cottage cheese more and more. I actually had to make myself eat it at the beginning of this journey a year ago, but now I find I enjoy it, whether with fruit or a more savory meal. I have been purchasing the no fat version and use it as a snack as well.

The lunches for week 87 utilize a variety of leftovers which is always a great relief on a busy day. Actually a great relief any day. I do plan to try a new egg salad, just to add some spice to lunch. (I have yet to decide which new recipe to try.)

The dinner plans for week 87 are really simple. Every meal but one is either cook once/eat twice or tried and true. The new experiment will be the sweet and sour meatballs, just because they look interesting and easy.

I have a few thoughts from this past week’s plan. Some good, some not so much. First let’s talk about chocolate oatmeal. Well, I gave it a try. I have come to the conclusion that many people who go on a diet plan seek to replace sweets and soft drinks. A post a week ago for Brownie Batter Chocolate Oatmeal came across my survelience and after reading so many positive reviews, I decided to add it to my breakfast menu. Well, all I can say is…it will not be on the plan in the future. (Just as I figured might be the case.)

The morning breakfast drinks planned for week 86 were ok. I can’t say that they take the place of bacon and eggs, but worth a try. The Frappuccino gave me an initial brain freeze…so careful as it goes.

Let me just say that I have tried a multitude of drinks and smoothies. There are times that they suit the purpose…filling me up. This peanut butter cup shake is delish. I am not kidding. It takes me back to burger, fries, and a thick shake. Who knew something with protein powder and almond milk could mix up with a few other ingredients to be so delish. I am so glad I discovered this tasty treat!
The taco casserole was a definite fail…no repeat.
The lazy lasagna was prepared by my daughter. It is a THM recipe that I have never tried. Excellent. The leftovers have been tucked away in the freezer for a future meal.

At the last minute I actually debated about having the Barbacoa Beef, since I have a family favorite tried and true slow cooker recipe using beef chuck. I decided to go ahead and give the new recipe a try and I am so glad that I did. It was very flavorful and enjoyed two different ways. My daughter and I made a “bowl” using lettuce, shredded cheese, guacamole, sour cream and salsa. We decided that the next time we would add green onions and tomatoes to the bowl. The ‘Ole Buckeye made burritos and thoroughly enjoyed them. This would be a fantastic crock pot meal over the summer months when we are busy with outdoor activities. Easily put together and totally enjoyable!

I thought I would post the link to a cream soup recipe that I came across. I need cream soups in several of my old recipes and have had difficulty making them THM compliant. This recipe fills the bill and can be adapted to be mushroom, chicken, celery, etc. I made my glorified cabbage recipe using the soup and it remained a family favorite with the change. Glorified cabbage is one of the best sides in my repertoire for S meals.

The salmon piccata…what can I say. It is so easy and so upscale delicious. I served it with roasted broccoli and spooned the sauce over everything. The link to the recipe is worth reposting.
