Week 18, 2019 with Trim Healthy Mama
The menu plan for week 18 begins with me hosting Bunco night and ends just prior to the long 4th of July celebration. When I am engulfed in planning for an event, I find it impossible to multi task. My concentration is totally focused on preparation. I also tend to set my sights exceeding high, meaning I often don’t succeed in achieving my goals.
With that it mind, it is understandable that I am making the menu plan for week 18 on the fly. I am totally dependent on what is on hand, without the assistance of any grocery specials offered. The grocery run will take place later in the week.
Breakfast
I have planned several new meals for breakfast during week 18 and have planned more E meals, including adjusting my favorite peanut butter cup milkshake into an E by using peanut powder in place of peanut butter. I must admit that the savory pancakes sound very intriguing.

Lunch
The lunch plan for week 18 includes only one new recipe. I came across the calico bean salad and it sounds ultra refreshing on a hot summer day.
Dinner
The dinners planned for the week are simple with only one new attempt…the sloppy joe casserole. For some strange reason that recipe sounds like a home run…at least in my current reach for comfort food.

The successes this past week revolved around several repeats, with adjustments, so I found them worth an additional mention.
OK. If all I say is that the ‘Ole Buckeye is not a fan of protein shakes and smoothies, but he now asks for this, and that should speak volumes!
I have made the White Gazpacho both as a fuel pull with Greek Yogurt, and as an S with sour cream. It is a home run as an S meal with a garnish of chopped tomatoes and almonds.
While dining at Stella’s in Charleston, we ordered the tomato dish that sounded similar to mine. One big difference…they added Greek olives and fresh basil as a garnish. I now make it this way…Oh my.

This meatloaf for our Father’s Day celebration was enjoyed by all. It seems odd to have meatloaf for a celebration dinner…but this is no ordinary meatloaf. A family favorite for the entire family, young and old.

If you would have suggested to me several years ago that I would cook and serve seared ahi, I would have told you that you were crazy. Fresh Market has fresh ahi, buy one pound get one free…This is the second time I have made it and it is fast and fabulous.
The muffins…excellent. I have packed the rest in the freezer for later. Love the combination of flavors.
An ultra busy week has come to an end. The food and fellowship has been so rewarding. I am looking forward to a more relaxed week ahead…maybe investing time in something other that cleaning and food prep. We continue the journey…healthy eating following the THM plan. Bon Appetit!
