2020 Week 9 Menu Plan
The 2020 week 9 menu plan is a bit more complicated than last week. The week begins with Bunco, but other than that, our social calendar is empty. An empty calendar requires much more menu planning.
Last week I was quite spoiled, but I also veered way off my healthy eating routine and the inroads I was making on weight loss took a detour. There was lots of pizza, heavy (but delicious) appetizers and sweets…lots of sweets. (I have decided that it would be quite rude to take a pass on eating birthday cake.)
Breakfast
The plan for breakfast during 2020 week 9 features 2 new casseroles that I anticipate will feed us more than one morning each and a new recipes for pancakes. So far most of the pancakes I have tried have been unsuccessful.
Lunch
The lunches planned for the week repeat several soups that we have enjoyed, a new black bean soup and a hot chicken salad that I used to make years ago. I have thawed some chopped chicken from a rotisserie chicken and it will be perfect for this salad. I also have left over dinners in the freezer that are not adequate for an evening meal, but perfect for a lunch.
Dinner
The dinners planned for 2020 week 9 come directly from recipes I have recently pinned on my Pinterest board. I pin interesting recipes onto several boards. At some point I actually try them out. If they are successful I move them to an appropriate board. For example if I find a successful soup it moves to “From Soup to Nuts” or “THM S or E Lunch.” I have pinned untried recipes to “Next Week” (986 pins), “Menu Plan” (1150 pins), or “Looks Good Enough to Try” (930 pins). Unfortunately all of those boards are completely out of hand. So many interesting recipes, so little time! Editing is in my future.

Recap
I will offer a short recap of last week. There were very few new additions to the menu, but there were successful meals.
The breakfasts were all repeats of favorites and continue to be.
The Tex Mex Frittata was excellent and reheated well. I made the recipe as directed but eliminated the potato. This is perfect as a breakfast, lunch, or dinner entree.
The secret ingredient tomato soup is not worth a repeat.
Last week was filled with all kinds of off plan foods and sugary sweets. We took part in the celebrations and I will say that my body is very aware of the lack of discipline. As we go forward I will get back into the routine of heathy sugar free eating. Bon Appetit.
