2020 Week 48 Menu Plan
The 2020 week 48 menu plan is complete and I am not going to go into a lot of detail because we are wrapping up a vacation week and jumping back into normal life…whatever that is. I will be quite busy when we return restocking as well as preparing for Thanksgiving.
For the first and only time in as long as I can remember, we will not be celebrating Thanksgiving with my side of our extended family. It took considerable and careful thought, but the virus and lockdowns made our final decision for us. As it turns out, my entire immediate family will be together, including my son if his flights work out on Wednesday to return to Virginia.
Breakfast
The breakfasts planned for the week are entirely tired and true. I am hoping that I have some of them in the freezer, ready to reheat. Unfortunately I am unsure of what I have stored away, so there may be some surprises.

Lunch
The lunches planned are repeats as well, and since I had included them on my menu plan before we decided to extend our vacation, I am fairly certain that I have many of the ingredients on hand. We will be doing a grocery and Costco run soon after returning home.
Dinner
The 2020 week 48 dinner plans include celebrating Thanksgiving at home with our family of 7. To be perfectly honest, I have not made a Thanksgiving dinner for years. Fairly often over the years after our traditional Ohio Thanksgiving with extended family, I would prepare our own version during the extended weekend. I loved to depend on the leftovers while preparing for Christmas.
The one new recipe for chicken parm I will try because of its’ simplicity. I will decide on what turkey burger version to prepare over the course of the week, but I am leaning toward Anne Burrell’s version. The Barramundi recipe is on the back of the packaging. My biggest task for the week will be determining the Thanksgiving menu.
Thanksgiving Menu
My proposed menu…Turkey, Stuffing, Blueberry Salad, Creamy Peas, Mashed Cauliflower, Cranberry Sauce, and Pumpkin Pie. The daughters will be bringing additional sides and appetizers if we decide to get together early in the day. I am planning only one new recipe…the keto stuffing. All of the other recipes are family traditions.

Recap
After an extended and much needed change of scenery, it is time to return to normal. It will be an ultra busy week due to the Thanksgiving holiday and the need to completely restock after being gone for over 2 weeks. The menu planning may not be as difficult as the grocery list planning. We very much look forward to being home with family, celebrating the holiday, and preparing for Christmas.
