2022 Week 8 Menu Plan
The 2022 week 8 menu plan is complete and quite diversified. It includes dining out, eating new meals as well as favorites, plus enjoying several meals for the second time.
Breakfast
I have mixed it up quite a bit in the mornings combining both E and S offerings with 2 untried recipes…the Samoas milkshake and the apple/cranberry oatmeal. The ‘Ole Buckeye has actually been partaking of the shakes and smoothies…but only in addition to his normal breakfast.

Lunch
I have several lunches taking space in the freezer, so I have a goal to utilize them over the next several weeks. The lentil soup made a huge batch so it appears once again. The newest recipe is the tomato soup which I am anxious to try. If needed I will make the taco soup, which is now one of our favorites.

Dinner
We have 2 evenings out this week, one evening together and another at separate events. Two nights we will finish leftovers. There are 2 new meals planned…the meatballs and the pork chops, both of them worth experimenting. The Greek Shrimp is a favorite and oh so simple to put together. As usual the sides and salads will take some extra thought.

Hits and Misses
I have gotten completely away from THM compliant shakes, smoothies, and sippers. Big Mistake! It is such an easy and enjoyable way for me to fill up while staying on plan. Unfortunately they don’t satisfy the ‘Ole Buckeye. He needs to “chew”. I have given him a portion hoping to retrain his brain. This “peanut butter blizzard” is closer to the Dairy Queen version than I would like to admit.
Low Carb Peanut Butter Cup Milkshake
First of all…I love Butterfingers. It is the candy I buy at Halloween in hopes that there are leftovers. It is hard for me to believe that this shake is on plan it is so good. No need for the candy bar when I can indulge in this deliciousness.
I have made this THM E recipe from the cookbook for several years. This time I made it in the crockpot to be certain the lentils cooked completely. This makes a whole crockpot full of soup which provides multiple lunches. It is unbelievably easy to make and extremely inexpensive. We eat it as is or stir in some fat free Greek yogurt.

Big hit as always…great chicken…greater ease of preparation! Asiago chicken has become a regular on the rotation. It is so easy to put together. This time we paired it with a Caesar salad and roasted asparagus.
I made this Marry Me Chicken for the first time for dinner guests when our neighbors moved away. I only made it once…big mistake. This chicken is flavorful and moist…definitly guest worthy.
That’s a Wrap
As has become routine, many of the planned breakfasts and lunches were never prepared. Our evening meals tend to follow the menu but breakfast and lunch…not so much. I have been fasting many mornings during the week allowing the extra portions to be eaten by the ‘Ole Buckeye. Occasionally lunch time found us finishing an evening meal and many of the soups feed us more lunches that originally planned. It really doesn’t matter…I would rather have ingredients on hand for what is planned than not have a plan at all. One afternoon last week we actually had lunch out with the now 18 year old to celebrate her passing the aviation ground school exam! The planning, cooking and enjoyable eating continue. Bon Appetit!
