2021 Week 3 Menu Plan
The 2021 week 3 menu plan is complete. I continue to attempt to serve at least one E meal per day and I have many new recipes. The week will require more time in the kitchen.
Breakfast
I have gone out on a limb and planned several new recipes for breakfasts during the week. Most of the new meals are actually THM S offerings. The ‘Ole Buckeye actually performs better with heavier breakfast offerings, so I have several new S meals. I have a habit of making big plans to make more elaborate breakfasts and then having cottage cheese and berries while the ‘Ole Buckeye has cereal.
Lunch
I have lots of soup left from last week, so we will see if all of the lunch plans come to fruition. I continue to attempt to serve at least one E meal each day and mainly it is breakfast, but this week I have planned more E meals at lunch. The 2 new salads sound particularily interesting.
Dinner
I have sooooo much chicken in the freezer. Black Friday at Costco was a sale that proved irresistible. It is now time to make a dent into the reserve. Several new recipes are planned along with the Greek chicken which was quite enjoyable especially since it is a THM Fuel Pull. The off plan comfort food meal is the Ham and Beans and Dumplings. It is a carry over from last week since I didn’t have the beans on hand.
Hits and Misses
I have made the Sriracha Marinara and Meatballs in the past. This time I used my new Jenaluca scoops that my sisters raved about.

I have yet another flavorful crock pot soup and I am especially excited that it is a THM E meal and a cook once/eat several times offering.
When I watched The Kitchen on Food Network last Saturday, this recipe not only sounded unique, but also very simple to prepare. I must admit that even though the reviews were 5 stars, I found it to lack flavor. It did make enough for an eat again offering, so maybe the second time around the flavors will be enhanced.
Roast Chicken with Polenta and Cherry Tomatoes
The past weeks have not featured many new recipes, but 2021 week 3 is filled with them. I am looking forward to a week of healthy eating and creative cooking. Bon Appetit.
