Menu Plan Week 94 with Trim Healthy Mama
The menu plan for week 94 has the beginnings of routine, especially for breakfasts and lunches. I have come to the conclusion during these busier spring/summer days that I prefer to stick with tried and true basics rather than spend an exorbitant amount of time in the kitchen. The ‘Ole Buckeye has been harping on this very thing for weeks.
The breakfast plan for week 94 reflects routine. I am depending on the freezer for preplanned meals. I have an easy breakfast casserole as well as breakfast cookies tucked away for future use. I have also found several THM beverages that I thoroughly enjoy. I have decided to enjoy them more often especially since I try to avoid heavier meals when it is so warm outside. Nothing new is planned.
The lunch plan for week 94 continues with the basics. I am not sure that “deviled eggs” would be considered by most as a lunch, but there are times that I would rather eat deviled eggs than most anything else. The only new recipe for the entire week is the taco pie. It sounds like a perfect lunch addition. Since our monthly breakfast group normally lounges over breakfast until nearly noon I have planned it as more of a brunch than a breakfast/lunch.

The dinners planned for week 94 continue to focus on family favorites since we are helping with the girls through Thursday. I am also making meals that can be staged to feed everyone over the course of the evenings due to busy schedules, babysitting and soccer practice. Wednesday the ‘Ole Buckeye sails and I have planned chicken crescents for the girls, one of their favorites. My daughter and I will eat the cook once/eat twice Bruschetta Chicken which is on plan. On Friday I will revert to a more normal schedule and luckily I can include a cook once/eat twice meal, as well as Amy’s chili tucked away in the freezer.
Week 94 is planned and almost all of the shopping has been done. I need only to pick up some odds and ends.
Now for the hits and misses during the past week.
For the second week in a row I have enjoyed this great Fuel Pull Beverage. I have incorporated it into my breakfast routine because I love the taste and texture of the blended coffee beans. I am realizing that this would be a perfect pick me up any time during the day.

I have died and gone to heaven. I had high hopes for this shake, after all Butterfingers are my very favorite candy bar. I put off making it because it is a two part process. The coconut caramel crunch must be made in advance. Well I finally make the crunch and after tasting it I simply could not wait to make this shake for lunch. OMG! No one would ever in a million years consider this to be a healthy low carb meal, but guess what…IT IS. This will be my go-to meal or snack any (every?) day of the week. This is a hit…right out of the park!!!

I added this soup recipe because I needed to use up my stash of broccoli. I get broccoli in the large bags at Costco and often need to utilize it while it is still fresh. This soup came to the rescue when the broccoli was slightly past it’s prime. What a delightful surprise. All of us loved it. It definitely needed the bacon garnish (I use the bacon bits from Costco, a real time saver and great to use in a variety of ways), as well as plenty of freshly ground pepper. A definite Hit!

The recipe for the pork loin sounded very interesting and the prep was interesting as well. The meal was “fine”. Would I do it again…No. I should just stick to the smoke alarm pork loin…why bother with new recipes when I already have a winner.

I really enjoyed the Bruschetta Chicken. I thought it was a perfect light summer meal. One of the grand girls liked it…the other scraped off the topping. Mixed reviews. Oh well…maybe it isn’t a repeat, but I enjoyed it.

I have a good recipe for oven roasted fajitas. In fact I made it again a week or so ago, but I continued to search for yet another recipe. Luckily I did not follow the suggestions from my family to stop trying so many new recipes. This new sheet pan fajita recipe will be my go to meal in the future. No further searching. I doubled the recipe since I was feeding the 14 and 12 year olds and dinner was a Hit with the entire family. (I doubled the recipe but only used one jalapeño–very sufficient.) I also utilized a new trick that I found during my research. By putting the baking sheets in the oven and preheating them before filling with the fajita mixture they cooking process is greatly enhanced.
The menu plan for week 94 was created to please the grand girls as well as fit into a relatively easy way to accommodate their schedules. It was successful. We will continue feeding the family through Thursday and then return to normalcy, whatever that is. We are looking forward to another week of good healthy eating. Bon Appetit!
