2021 Week 23 Menu Plan
The 2021 week 23 menu plan is complete.
Breakfast
I am back to lots of oatmeal in the morning. I don’t always eat breakfast and this is a quick and easy preparation for the ‘Ole Buckeye with lots of interesting flavors. If he is not in the mood for oats, he will fix himself soft boiled eggs and toast. I can always be assured however that he will eat BAM cake…one of his favorites. I don’t make it often because he eats all the bananas before they get ripe enough to use.
Lunch
2021 week 23 has lots of eat again meals, the recipes of which can be found on last week’s menu blog post.
Dinner
The dinner plans for the week include an eat again meal, a new pizza casserole recipe, a comfort food evening with ham, beans and dumplings which is totally off plan, traditional beef stroganoff made with the left over grilled flank steak and easily grilled burgers on Sunday with our daughter who will be returning in the evening from a short weekend trip.
Hits and Misses
Aside from the fact that this smells wonderful when it is baking, it was quite tasty and worked well on multiple mornings. We have in the process of all of these oatmeal preparations decided that cooked oatmeal on the stovetop and overnight oats take a front seat to baked oatmeal. We like our oats moist.
I think this plant based dish will become a regular on the lunch menu. I use vegetable broth in place of chicken broth and it serves several lunches. A squeeze of lime definitely enhances the flavor.
Winner, Winner Chicken Dinner! We have yet another great chicken preparation to add to our favorites and it is a one pan wonder as well.
We had this salad twice this week. The first time I made it as written with the raspberry vinaigrette. The second time I served it with my THM poppy seed dressing…a definite family favorite.
We definitely liked it best with the poppy seed dressing. This salad is a definite keeper especially with the warm summer months ahead. It can easily be included in an upscale meal when entertaining.
This is one of the earliest desserts that I made for company when first getting on the THM eating plan. I never made it again for some reason, because it was a hit with everyone the first time. Our neighbor who has packed up to move joined us for dinner and I decided that this would be a great dessert to serve and could then travel to our son’s for a Sunday treat.

Recap
Once again plans changed as did my menus and meals. We had a cookout at our son’s home moving the asiago chicken to another time and because of a toothache we moved the tortellini soup off the menu subbing it with a meal from the freezer. We have found that we can easily adapt if needed. The week ahead is filled with food we enjoy without a lot of difficult preparation. We continue the quest of healthy eating as well as discovering more ways to incorporate good and varied food choices. Bon Appetit.
