2022 Week 2 Menu Plan
The 2022 week 2 menu plan is complete.
Breakfast
The breakfast plan for the week includes leftovers from last week and includes the egg casserole which I never prepared.
Lunch
The 2022 week 2 menu plan for lunch includes the Jalapeno Chicken Bacon Chowder from week 1, our favorite crack chicken soup and a new recipe for slider wraps that sounds very much like sliders that we have enjoyed in the past using Hawaiian rolls…a low carb version would be a winner.

Dinner
The dinner plans for the week include 2 Green Chef meals and a favorite Greek shrimp recipe that I have been craving. I have several green peppers and plan to make an old family favorite from the Betty Crocker checkered cookbook. I will substitute cauliflower rice.
The chicken marsala recipe will utilize a bottle of Wildtree Marsala sauce that I have had forever. (Since the first of the year I have been purging…the pantry is no exception.)

Hits and Misses
This low carb recipe for butternut squash soup caught my eye because the ‘Ole Buckeye is not a fan of a “sweet” soup which butternut squash soup often is. When I found this recipe for a savory low carb soup, I decided to give it a try. Fail. The ‘Ole Buckeye was defiantly not a fan. I enjoyed the soup, but since it was rather labor intensive it will not be included in the future.

All of the other “Hits” are repeats of past favorites that appear often on the meal rotation.

Recap
Many of the meals planned during week 1 actually went further than I anticipated since I was only cooking for the two of us. Because of that meals moved forward into this week making it much easier to plan the menu. Going forward we will be once again sharing meals with our daughter. I must admit that I am more proficient at a well rounded meal when it is more than the 2 of us. At times I become a little lazy. The week ahead holds some exciting offerings. Bon Appetit!
