2025 Week 21 Menu Plan

The 2025 Week 21 menu plan is complete and includes several meals from week 20’s menu. We were invited for family dinners on 2 separate evenings…Salmon Chowder with our daughter, and Pizzas on the Green Egg with our son and the family. 

In addition I invited our neighbor for dinner on Monday evening and prepared Bobby Flay’s meatloaf instead of the chicken dinner originally planned. Due to all of the changes many of last week’s meals have been moved into this menu plan.

Breakfast

This breakfast bake is an all time favorite of the ‘Ole Buckeye. Why have I waited so long to reintroduce it on the menu? I had truly forgotten how delicious and nutritious it is and packed with protein as well. It will be on the rotation much more often.

This family favorite soup is always a treat to eat. The recipe makes a huge stock pot full of soup which feeds us for multiple lunches and we never tire of eating it.

Dinner

I prepared a new salad recipe to accompany our left over flank steak as a steak salad. Since we both enjoy blue cheese I knew this could be a winner, which it was. It is a real treat to be able to enjoy a flank steak fresh off the grill and then a second time on a great salad.

I failed to mention last week that I made this rice to accompany my Greek meatballs. It makes a lot of rice…so keep that in mind. Luckily I will put it on the menu once again when we enjoy the meatballs a second time.

I had several new salad recipes planned for the week…in fact one evening was supposed to be a salad dinner. Instead I took the Farro Salad to our son’s for Pizza night. The salad is very Greek which all of us love and it went well with 3 different pizzas. It was also very enjoyable the next day.

The grilled asparagus salad accompanied Bobby Flay’s meatloaf on Monday evening when we had guests for dinner. It has such a variety of flavors and textures and made a great addition to our meal.

I make oven roasted vegetables often, but decided to try something new. The vegetables were good, but I have made better grilled or roasted veggies in the past. I will go back to tried and true.

Week 20 was certainly not as planned but it made decisions for 2025 week 21 much less complicated. Looking forward to another week of exciting food and the holiday weekend with family. Bon Appetit!
