The menu plan for week 45 is focused on the inclusion of at least one THM E meal each day. I have also deliberately taken a variety of recipes from the Trim Healthy Table Cookbook. Many great recipes have been taken recently from the internet, but I have not taken advantage of the wonderful recipes included in the THM cookbooks. I want to focus on some of those recipes over the next few weeks.
Breakfast
The breakfasts for week 45 include several cook once/eat again meals. All of the new recipes are from the THM Table cookbook. We love BAM cake and I am anxious to give the pumpkin version a try. The other recipes are a new take on eggs.

Lunch
The lunches for week 45 focus on soup. The weather is cooler and soup is so appealing, not only for taste, but also convenience. Often we get several meals from one soup recipe. The soup recipes are all new except for the chicken fajita soup.

Dinner
Some of the meals featured for week 45 look to be repeats from last week. Correct. Several of the meals from last week provided an eat again dinner. I have added the untried meals this week.

Recap
There were several new recipes on the docket last week. The very first one that I prepared was the Portobello Pizza. I made it as directed adding only chopped bell pepper and cooked bacon. Delish. The ‘Ole Buckeye liked it as well. It took very little time and effort. All of the ingredients were on hand aside from the fresh mushrooms. In the future whenever I find good looking portobellos, I will pop this recipe into the menu plan.
It turned out that I had only enough chicken a la king for 2 servings. Since my daughter was not joining us on Halloween, I decided to make an easy evening meal by heating it up for just the two of us. I did not want to take the time to make cauliflower rice or zoodles, so I decided to make the keto biscuits. In the past I often served chicken a la king over biscuits, so why not now. It would also be a good test for breakfast later on.
Keto Sausage Gravy and Biscuits…OK…all I can say is OMG! This was absolutely delicious. I will do that again. This is a keeper! The biscuits were excellent with the chicken a la king too.

The two meals from the THM cookbook were successful as well.
The Taste of Home recipe originally planned for lunch also became a dinner entree. The ‘Ole Buckeye really liked it and the casserole was so big it became dinner when our schedules made it impossible to create a meal from scratch. The recipe reminded me of casseroles from the 60’s…I guess that is where the name came from.
The orange chicken served us for two dinners as well. The first night I served it as directed. The second night I added peanuts to the chicken when I reheated. This was a great way to enjoy Chinese food without the breading and sugar.
In conclusion…
We are off to yet another week of great eating. Fall has arrived as has heartier foods. I am looking forward to exploring more foods while following the THM eating plan. Bon Appetit!
