The menu plan for week 85 will include several cook once/eat twice meals as well as several meals postponed from the past few weeks. Our social calendar improved and provided several unplanned evenings with family that included dinner. Since I have provisions for previously planned meals, this week’s planning is quite easy. There are very few new recipes and very little shopping required.
The breakfast plans for week 85 will be fairly simple. The old standby breakfast pancake returns. That meal is quite easily my favorite breakfast E meal, plus it is easily prepared and goes a long way. Since I didn’t make the sausage balls last week, they are included once again.
Lunches for week 85 rely on past favorites and quick and simple standbys. I have been purchasing assorted chicken sausage links and have found that they provide a very satisfying lunch on a low carb wrap with onion and mustard. The rustic farmer’s omelet is a repeat of a successful first try last week. It is a great way to use up a variety of vegetables and very good.
You might be noticing that several of the meals planned for week 85 were actually on the menu last week. The reason is quite simple. We not only shared Easter Dinner with the whole family, but on two additional nights we enjoyed tacos and Greek meatballs at my son’s home. Because the weather lent itself to outdoor activities and his home provides just that, I am beginning to realize that we will be spending many weekends and evenings at their home on the water as the weather gets warmer. That being said, several dinner menus passed from week 84 to week 85. You can link to the recipes here…Week 84. The only new addition to our dinner line up will be the easy taco casserole.

We had several favorites from last week’s preparations. The Crockpot Spinach Lasagna was a success and I have tweaked the recipe to create a less soupy more stable lasagna. It will serve us at least one more meal, maybe two. I have decided that the next time I make it, I will use half ground beef and half spicy Italian sausage.
Crockpot Spinach Lasagna THM S The secret tweak…do not add the water. I simply rinsed the tomato paste cans with about 1/2 cup of water and that was all the water required. I also drained the liquid off of the ground beef after it was browned.
There was a change to our Easter Menu. By popular demand we deleted ham as an entree and opted to make the Smoke Alarm Pork Loin. My son has a Green Egg and we did the ultimate experiment on a holiday…the pork recipe on the grill. Success!! In fact the entire dinner was a success.

Another week of healthy eating lies ahead. I have not ventured into many new recipes, but I am certain I will do more experimentation in the near future. For now, it is good eating on the THM plan enjoying successful meals. Bon Appetit!
