Monday Morning brings another meal planning session. This week the grocery specials will not dictate the meal planning. The week is packed with warm weather, Celebration Days and Annual Event Days which always make menus exciting to plan. Even though I do not want to spend the entire week in the kitchen, I am excited about planning both new and tried and true recipes for the week ahead. The added benefit…a closed kitchen on Sunday.
Monday: Stuffed Burgers and Spaghetti Salad (an 80 degree day is in the forecast)
Tuesday: Leftover Chicken Dijonnaisse
Wednesday: Chicken and Beef Enchiladas
Thursday: Chicken Fajitas
Friday: Leftover Mexican Dishes
Saturday: Derby Party with the Grandgirls
Kentucky Hot Browns, Cheese Grits, Derby Pie and Oak’s Lily Drinks
Sunday: Mother’s Day The ‘Ole Buckeye’s Day–to plan dinner that is!
