After week #11 which became a dual week with lots of leftovers, I am ready for another creative week of meal prep. The grocery list is prepared and the food on hand checked. The weather the beginning of the week is predicted to be spectacular. Let the meals begin!

By request from the “Ole Buckeye I am combining tried and true recipes with new additions from my “Looks Good Enough to Try” Board on pinterest. I think he is beginning to feel like a Guinea Pig. He isn’t complaining because most of the new meals have been successful, he just misses some of his favorites.
The Chicken Dijonnaise and the Quinoa Casserole (meatless meal) are new. The Greek Meatballs is a recipe in progress. I have made them successfully, however I am not completely satisfied with the sauce. Hopefully Wednesday’s rendition will be the final version. Let the week begin!
