2024 Week 41 Menu Plan

The 2024 week 41 is complete. As usual there will be several carry over meals from week 40. The planned evening meals changed last week…we had a family dinner together at Quemar on Friday, we had a Saturday game day (watching 3, 3:30 games…Auburn, Ole Miss and Ohio State) all at once on 3 TVs at our son’s home with pizza and wings, and on Monday our daughter had us over for a soup night. That made for 3 evenings of meals out. Whoop. Who knows how the plans will go this week.

An additional advantage to last week’s menu was that several meals served at breakfast. lunch and dinner will be enjoyed a second/third time this week.

Hits and Misses

The ‘Ole Buckeye raved about this breakfast. What could go wrong with peanut butter and chocolate. I use Lilly’s chips. This could also be served as a dessert.

Vegan Snickers Baked Oats*

This is with out a doubt our favorite lentil soup…why I try other recipes I don’t know. I just need to put this on the rotation and be done with it.

Alton Brown’s Lentil Soup

This Zuppa Toscana is one of our all time favorite soups. I first tried it years ago using the Trim Healthy Mama cookbook and we have had it frequently over the years. It is hearty, full of flavor and lasts for multiple meals.

Zuppa Toscana

It has been some time since I have made this vegetarian dish. I use very little cheese. It is one of the better quinoa dishes that I make.

Quinoa Fiesta Enchilada Bake

We love meatballs and I make them often. Although there were “fine” they will not be repeated.

Baked Enchilada Meatballs*

Recap

One advantage of the meals planned last week is that they reappear this week as a cook once/eat twice offering. It makes the time in the kitchen all the more worthwhile. My plan next week is to review past successful recipes that have been forgotten and reintroduce them to the rotation. The adventure continues. Bon Appetit!
