2022 Week 47 Menu Plan

The 2022 week 47 menu plan is complete. Last week fell apart and many of our plans changed. Because of those changes this weeks menu plan reflects many of the meals from week 46. (link

Most of the meals planned last week were cook once/eat several times. On top of that, we celebrated our family Thanksgiving on Sunday so that we could all be together. Most of the meals planned last week have been moved forward. 

Breakfast, Lunch and Dinner are all transfers from week 46. 

We actually had a lovely Thanksgiving family dinner last Sunday and everyone provided several side dishes and beverages. Our menu consisted of a jalapeƱo, cream cheese cranberry spread appetizer, Roast Turkey, mashed cauliflower, roasted delicata squash, creamed mushrooms and peas, paleo stuffing, roasted butternut squash, blueberry salad, kale salad, and pumpkin pie. A true feast.

The only new recipes are for our “repeat” Thanksgiving meal on the true Thanksgiving day. To accompany the left over roasted turkey I have planned the following sides:

My favorite baked oatmeal so far! Wow this is delicious!

Berry Baked Oatmeal

I froze the base of this soup before we went on vacation. I thawed the base and added the canned salmon for lunch. The soup is quite rich. The only draw back…the kitchen smelled like a fish market!

Not only is this meal delicious, but it is packed with nutrition. The first night I served it over whole wheat rotini. The second time around I served it over spaghetti squash. This recipe will be often repeated over the winter.

This is a great quick dinner and it makes plenty for an eat again meal.

Garlicky Mushroom Quinoa

Yum…always great. The addition of fresh cilantro and avocado makes all the difference. I should remember to put it on the rotation more often!

I will admit that after a 21 day vacation it has been difficult to get back into a rhythm of cooking again, especially with the Thanksgiving holiday. Hopefully I will get back into a grove and the kitchen will be humming once again. We continue learning about the importance of healthy eating and developing meals that are truly enjoyable.
