2022 Week 39 Plant Based Menu

The 2022 week 39 menu is complete. We are expecting guests Thursday evening through Sunday lunch and I will be planning meals that will satisfy all of us. I will be utilizing meats still housed in the freezer to create many family favorites which may conflict slightly with our newest eating plan, but will be enjoyable for everyone.

Breakfast

Most of the breakfasts are within our current eating plan aside from the sausage casserole, which is a perfect “company” dish in the morning. The sausage will be eliminated from the freezer which is another long term goal.

Lunch

I have a feeling we may have lunch out, but I want to be prepared for lunch at home. Creating soups in advance will do just that.

Dinner

Luckily I can rely on leftovers the beginning of the week and plan well rounded dinners while guests are here. I have a seasoned brisket in the freezer from Aldi. We have enjoyed it in the past, and hopefully this one will be as flavorful. The gourmet burgers are on sale this week at Harris Teeter and they are always a hit. I will round out the week with the mushroom stroganoff which I never had the chance to prepare last week.

Hits and Missed

This recipe was way more time consuming than it was worth. It was defiantly an eat again brunch to lunch meal but will not be repeated.

Huveos Rancheros

We enjoy a lot of great soups and I am always eager to try more especially as I experiment with more plant based eating. This soup lacked the layers of flavor that we have come to enjoy and will not be on our rotation.

Lemony Kale and White Bean Soup

Let me just say that my daughter shared the paella with us…she raved. In fact she said she would eat this one a week. It was very good and there was enough to feed 3 hungry humans one night and 2 once again for another. Definitely rotation worthy.

Vegetarian Paella

I made this “stew” for dinner, but we decided it would be a better lunch offering. While it was good, it failed in being a satisfying dinner entree. It was a cook once/eat again preparation but we will finish it at lunch.

Portobello Stew

Unfortunately I neglected to prepare this salmon recipe as directed and I am guessing that is why it wasn’t as good as I expected. It will be worth trying once again in the future (making it correctly). I love salmon with dill.

Recap

All in all we had a great week of healthy meals. We were treated to dinner with my daughter once again and she prepared an exceptionally good menu from Purple Carrot and paired it with salmon. Having dinner with her was like going out to a 5 star restaurant. We look forward to sharing meals with family next week, hoping to continue the heathy plant based diet. I want to insure that the meals will be enjoyed by all so I am incorporating healthy family favorites as well. The adventure continues. Bon Appetit!
